Drain the juice out of about six cans of beets. Heat the juice up on the stove. When warm, but not boiling, add 1 cup sugar and 1 cup cider vinegar. When sugar is melted, take off the heat and taste. If you want more sugar add a quarter cup at a time. Pour juice over eggs while warm.
My family prefers the 1 cup sugar and 1 cup vinegar flavor.
??? He is wanting to pickle eggs, not beets. I love pickled beets, sorry Jeff :D, but can't handle the eggs

I do almost the same but I add onions cut real thin after the eggs are gone I eat the onions digin_2
I usually just save the juice out of the Hot n Spicy pickle jars and the Bread n Butters and put it in a big jar and toss the eggs in.
Wait a few days and eat up!
In my opinion eggs is the most versatile foods there is, you can cook them any way you want and it is pert neer impossible to make them unedible, unless you pickle or poach them.
Shoot man I would even eat grits before I stuck another pickled egg in my mouth.

I do exactly what Weekend sawyer did by proxie via Roxie and Coxy! Just had the last egg out of a dozen I did at Christmas. Very Tasty!
Try several with a can or two of beer if you like .The reaction should happen in about a half hour :D
My father and I went to a pig roast many years ago and my grandfather sent a huge jar of pickled eggs. They were a big hit, especially so with Bubba. Not long after, Bubba was asked to maintain a significant distance from the festivities. :D
My sil without thinking, fed several eggs to their St Bernard dog. Works same as on bubba.. smiley_airfreshener smiley_airfreshener

Bars around here always had a lage jar of pickeled egg behind the bar. In the years spent in such establishments, I was never wasted enough, or hungry enough to try one. Always wondered if they ever sold any.

One of our coaches in HS kept a couple of gallon in the gym and sold them at the end of class every day. It was a year round fundraiser. No telling how many eggs he sold through the years.
In my school days at Mizzou there was a bar called The Stein Club, $0.15 drafts, and a cheese plate for $0.50. One pickled egg, crackers, and rat trap cheese. Fairly regular lunch when funds were down.

Growing up seem like most small stores had pickled eggs. I never tried one. I really don't know why,I do like eggs,but not hard boil. Maybe that is why I never tried one. I can remember the clerk would give it to them in a small waxed bag.
If someone wanted one now,I would have no idea where to go.
Memories .The little podunk town I grew up in had an American Legion Post that was opened to the public .About every Saturday afternoon a bunch of old coots ( my age now ) would gather ,eat pickled eggs,Penrose hot sausage and drink beer out of quart bottles for 40 cents a pop and argue .As the afternoon went on they got louder and more aromatic in a sense . Olfactory sense as a matter of fact .

As an almost neighbor of Roxie's I am very familiar with her recipe for what we call "Red Beet Eggs", not the same as the white pickled eggs you find in much of the country. We also slice up some of the beets and leave them in with the eggs. They keep pretty well in the fridge but can't leave them in a jar on a shelf for months like the purely pickled version.
Other than sweet or bread and butter pickles, I have never found anything pickled I would put in my mouth a second time, period. I used to dring as much as any man alive, but they just never made enough beer to get a pickled egg down, or to eat a pickled pigs foot either. I did choke down one pickled okra once, but it took everything I had not to spit it out. I think that is a taste you have to aquire and probably start pretty young to be successful. lol
so wouldn't eat pickled ticker or liver either but you live in the no mans state your supposed to be a tough guy if you live there ;) :D :D
I have always been willing to try anything ONCE, but some got spit back out. I tend to think taste buds kind of goes along with what you were brought up eating, I remember as a small kid eating sardines with my dad, and at the time thought they were good, skip a few years and there is just no way I can stomach them.

Wife and I was at a barbeque joint in northern Alabama a few years ago and they had fried pickles on the menu. I ask the waitress or waiter, wasn't 100% sure what they were and he (or she) said youall ain't from Alabama are you. lol I got a kick out of that. I did order some, and ate one, but the rest were left untouched. The wife wouldn't let me ask the waitress if she was a he or a she. lol
starmac, sardines are GOOD! I also like pickled herring in small amounts, they are pretty strong. Karen who was of Finnish descent would almost leave the room if she saw me eating them, they were a staple in her grandmother's house but she couldn't stand them..
By golly, your taste buds may think sardines are good, mind would think I was chewing on 3 day old cut bait. You don't have to worry about me driving the price of them up.

Sardines are good. I prefer the sardine steaks with the hot tomato sauce....mustard sauce is good too.

Well you can pickle about anything.Eggs,cauliflower pickles of course,pigs feet .Too much beer you can even pickle yourself .
Now then beets .I've found the best use of those things are for pickled eggs then you toss the beets in the garden after you eat the eggs .
Did them up last night!
Made up a quart of pickling brine
2/3 vinegar
1/3 water
2 Tbsp crushed red pepper
couple of shakes of Cajun mix
1/2 tsp sugar
1 tsp salt
1 medium sized chopped onion
Added brine as the eggs were filling the jar!
Had 2 more onions cut in quarters and were added as the jar was filling with eggs!
Sampled the brine, tasted pretty good!
We'll see how long they last in the sugar house during sugaring season!
Does 'they' refer to the eggs or your helpers?

Someone above mentioned Penrose Sausages. Do they still make them. I looked at the local grocery store. Sort of got the hankering for some after reading this. Found pickled eggs, pigs feet and some kind of bologna that looked like weiners but no Penrose sausages.

My Stepmother made a fine pickled egg. To the best of my recollection this one is pretty DanG close.
I remember she used the same recipe as the eggs for kielbasa except she added a bit more vinegar.
My Dad would eat the eggs, kielbasa, Limburger cheese and thick slices of onion all washed down with cheap beer.
I remember one time after he ate the above snack we went grocery shopping. At the checkout counter critical mass was reached, toxic fumes released, it was awful. He waited a second or 2 then said in a overly loud voice "anyone smell popcorn"?

finally made the eggs
24 large will fit in a 1/2 gallon canning jar, without the onions. so i used 2 jars.
Hard boiling

then microwave for 3 minutes
1 c beet juice
2 clove garlic
1 Tbsp curry powder
1/2 Tbsp dill
1/4 tsp oregano
1/2 tsp paprika
1 tsp salt
1/3 c sugar - granulated
1/2 tsp thyme
3 c vinegar - apple cider
1 c water
then had some juice from a jar of Famous Dave's Pickles

If you do more and have access to an Instant Pot or other type of pressure cooker do your eggs in them. Peelings just fall off.

There are plenty of IP recipes. One was 1 cup water and five minutes at high pressure. Manual stream release after five minutes.
On a side note, I saw in the news yesterday that the chefs for one countries team (don't remember which country) accidently through the computer translator ordered 15,000 eggs, instead of the intended eggs for their olimpic meals. Now them chefs could probably use any recipes you have got.
They said they didn't realize their mistake until the delivery showed up, there was just no end to it.

We went to the Sugarhouse today and when we got a break in setting up, I got the jar of pickled eggs out and we each had one!
Those eggs were so mild, I'll be adding a quart of vinegar and a little bit of crushed red pepper tomorrow morning! :-\
I drained off enough vinegar and added a whole quart of apple cider vinegar and a little more red peppers last week!
Tried one today and they're pretty good now!
Added to them again today!
Two tbsp. crushed red pepper
One tsp Cajun mix
One tsp Creole
Half tsp Chilli Powder
That should touch them off pretty good!
We tried them late this afternoon and they were really getting pretty tasty!
It'll be time to add more eggs to the brine soon.
Okay, I have bit my tongue long enough on this issue but I am like pickled eggs like many of you folks north of here are about Grits. I don't like pickles or boiled eggs (Yes, I did try them and confirmed I did not like them) so combining the two never had a chance with me.
My kids, grandkids and wife like deviled eggs and such but not for me. Hard cooked scrambled eggs or omelets are the only way to eat and egg IMHO. :D
Oh no, fried,scrambled, boiled, or deviled, the only two ways you can ruin an egg(unless you get foreign) is to poach or pickle.
As long as you stay from the p's, you are good to go.
Not to big on raw eggs, most any other way is ok by me.

we have a six egg poacher. uses metal cups and water to heat the cups.
the only way i like fresh raw eggs is when it is mixed in something and used that day.
Eggnog, mayo, and so forth.

chuck there is a little gas station out on 365 going toward Ohio ny that has pickled eggs we use to get them all the time when going to the other camp
In this area, a lot of Mom & Pop stores have them on the counter, as well as the bars and bingo halls!
At the bingo hall where we used to work, they were $.75 each, and we were always selling out!

We got the pickled eggs for the bingo hall from Glazier Packing Co., and they were in plastic jugs, ie; Food Grade of course!
If you pickle some for yourself, it's up to you what you want to put them in!
Linda just put some in pickled beet solution.
She didnt care for them that way but were OK by me.
