had the bark left over, and it's hickory for sure,  just a jag for a light dinner and lunch tomorrow.


  

 
Yea, I know the selfie is a bit much, but I love my chef hat, bout twenty years old, a gift from my brother Steve, another hour and bone pulling wings are in order, that's order UP!
only have a few chain saws I'm not suppose to use, but will at times, one dog Dolly, pretty good dog, just not sure what for yet,  working on getting the gardening back in order, and kinda thinking on maybe a small bbq bizz,  thinking about it,

I love to grill wings too.  I like cherry wood.  Also pecan, which is a hickory.

I love them smoked like that, but I apply  2 coats of sweet baby rays wing sauce during the last 15 minutes to crisp up & tenderize the skin.  digin1

For a dinomite wing, after you smoke them, flash fry in really hot oil to get them real crispy, then put on your desired sauce. A BBQ joint in Des Moines, Iowa, Jethro's does it that way and it's the best I ever had. That's how I do mine now and it's a very big hit.

I like the hat! wings are one of my favorites and those look great. along with just about anything smoked. well, and also anything that wont eat me first. Maybe this is why I always need to diet  :D
It seems I am a coarse thread bolt in a world of fine threaded nuts!
