Thanks Norm..It's Sunday and a bit after 7am, Sundays are Bacon and eggs morning in our house. looking at that chart I should get more bacon than Nicky, don't want her to be anymore warrior like, that could get dangerous. :)

We just started to cooks ours on a cookie sheet in the oven,450° 20 minutes. No wheres near the mess like in a fry pan. No need to turn it,just put it in and forget it for about 20 minutes.

Had a bacon, mushroom and cheese omelet for breakfast this morning. Doesn't get any better than that. ;D

I love bacon!!! Unfortunately we are out of bacon from the hog we had butchered last fall and have to buy store bought but it is still good and can not live without.

You can't kill old traditions. ;D My brother I think lives off bacon.  :D :D Well maybe that is extreme, but when groceries come up in conversation it includes bacon. ;)

Been doing it for years;  I layer the cookie sheet with parchment paper;  remove the bacon, pour off the grease, throw the paper away.  Absolutey NO mess and the bacon is 'flat' rather than curled, like from a skillet.  Not sure how much temp the parchment paper will stand.................I cook at 350°.

Berkshire bellies with one slathered in tender quick and honey the other brown sugar and tender quick. I wanted to try one with maple syrup but we ate it all last night on buttermilk pancakes.  :D

Norm, have you tried brining it so it doesn't get so salty? How long are you letting it cure?

I haven't Lee but next batch I'll give it a try. I do a 24 hour soak at the end of 6 days curing to get some of the salty taste out. Last batch was not too salty so I'll see on this one whether I just got lucky.  :D

Mine always turns out too salty when I just coat it. I'm going to try brining my next batch. I did brine the last hams I did but haven't tried them yet.

this AM was waffles, bacon, & Bob Evans hot (spicy) sausage.  :P 8) tonight is Pizza, (JUST) popped the crust into oven after a 20 min rise and coated pan and hands to flatten it out with the bacon grease.   Will be browning it at 350~400 for 10 more min then start stacking goodies on top.   
layer of peperoni flavored sauce
add fried sausage bits
then hamburger bits  (pre-fried w onions) on next
next usually mushrooms and fresh cut onion hunks
Her side gets several types of peppers (yellow, red & green) banana peppers too w black olives.
coat of several types of cheese in a medium layer
then toss on some pepperonis that we microwave on paper towels
and add on a 2nd layer of cheese.

Pop into oven 10~15 min on 350F

I bought a half pig from a friend that raises them.
The butcher lady called me up, " how do you want your pork?"

"Bacon"

"O.k., what about the rest of it?"

"Bacon"

"I'm serous here, what else do you want out of your half?"

"Bacon".

She didn't hang up on me but finally offered me shoulder bacon along with the regular :D
