Title: Making Bean Soup

Tomorrows cooking project will be Bean Soup!

The beans are soaking overnight, will be drained and rinsed in the morning and then go into the crockpot!

I'll be adding some chopped onions, and a good sized package of ham pieces!

Anybody got any other recommendations?

Add to you recipe:

I green bell pepper
Minced garlic to taste
Use chicken stock instead of water for more flavor
Can of stewed tomatoes
1 pound of your favorite sausage, browned and drained before adding.

Oregano and basil too.

I make 8 qts of soup almost every week. Last week it was chicken noodle, this week it is going to be Olive gardens Pasta Fagioli.

Chuck, first pickled eggs and now bean soup, are you looking for a new source of "natural" gas? Roxie's red beet eggs would go great with bean soup and magnify the results.

@Raider Bill, what is this Olive gardens Pasta Fagioli of which you speak?

Chuck, to your recipe I would add finely chopped celery and carrot and a small can of tomato sauce.  Git her going and start adding WDH's additions.  Danny, I also use chicken stock to replace water, but have never thought of browned sausage.  Gosh that sounds good.  My favorite soup to add sausage to is potato.

I use a 8qt crock pot   

1 tablespoon extra virgin olive oil
    2 pound lean ground beef or mild Italian sausage or 1 of both
    2 whole carrots, diced
    4 celery stalks, diced
    1 medium onion, diced
    28 ounce can diced tomatoes undrained
    3 boxs  beef broth
    2 whole bay leaves
    1 teaspoon dried oregano
    1 teaspoon dried basil
    ½ teaspoon dried thyme
    salt and pepper to taste (I added 1 tsp salt and ¼ teaspoon pepper)
    1 can (15 ounces) cannellini beans, drained and rinsed
    1 can (15 ounces) red kidney beans, drained and rinsed
    1 can black beans drained and rinsed
    1 cup ditalini pasta, uncooked

    brown beef in EVOO
    Place the beef in a slow cooker along with the rest of the ingredients except for the beans and pasta.
    Cook on low for 7-8 hours or high for 3-4 hours. 30 minutes before serving stir in beans and pasta.
    Season with salt and pepper to taste.

Serve with thick slices of Italian bread slathered with huge amounts of butter!!

X2 on the chicken broth, I just use onions, celery, smoked ham hocks and dry beans. Hope your happy, now I gotta make a batch! musteat_1

Had some once that had a bunch of bacon already fried and tore in small pieces, canned tomatoes and don't know what else but it was good. Speaking of beans anyone ever tried the 15 bean mix you see in grocery stores with the dried beans?

I really wish all you folks that know how to cook would stay off this forum it always leaves me hungry!  :)  That being said I'm glad you brought this up Chuck (no, no pun intended) I love bean soup now I have to try all the ways.  I always use ham but a lot of everything here sounds great.

You can also add smoked link sausage cut into thin round slices.  I also like to use the 15 dry bean mix that you can get in the bag at the grocery store to make my bean soup. 

Oh, and I love that split pea with ham soup too.  GOT to have cornbread with both soups  ;D.  One good way to serve the soup is to put the cornbread in the bowl and ladle the soup over the top  digin1 food1.

I got thrown off a horse in front of Woolworths when I was  kid. That cured me.

Actually many years ago in another life I owed 2 horses.  My first ex thought it would be cool.
I found owning horses in my case was worse than owning a boat. At least with a boat I could park the DanG thing and forget about it. Them horses wanted to be fed and stuff.
I did enjoy trail riding but not enough to keep them. Traded one for a snowmobile and a shotgun the other I sold to another idiot like me. ;)
Now I like my saddles to be over a V-Twin.

Just found a package of ham chunks in the freezer, I see a soup either bean or split pea in our future very soon, with corn bread of course!

I didn't see anyone mention bacon fat!  I add alot of bacon fat to my bean soup and it's delicious!

The other secret ingredient is Smokywood Pastures summer sausage, diced.  It has just the right combination of spices and salt  8)

That's true. We have a couple hogs butchered each year and I always have some fat but away for beans and soups.

Yes, we also use the 15 Bean Mix, and it is heavenly with cornbread! We buy those cheap spiral sliced Hams (which go for ~$0.88/ lb this time of year), and save the Bone (with all that good stuff that wasn't sliced) and throw that into the pot. We just did that a couple weeks ago..... Nom, Nom, Nom!
I've been wrecked riding bikes, and I've been wrecked riding horses. The wrecks on horses were more memorable, mainly because there were a lot more of them, and the results were more "memorable".......
