Grilled stuffed breakfast burritos.

Well, they aren't just for breakfast, or with breakfast in them, but that's how I've been making them lately. They are quick and easy. I make scrambled eggs in a small pan, add cheese, veggies, whatever you want in the small pan. I put the fixin's in a flour tortilla and wrap it up and then put it in a big dry skillet and brown it quick on both sides. food6 You can also make it with other fillings. Pizza grilled stuffed burritos are good too. Cheese, sauce, pepperoni, onions. food6

Hmmm.. Might have to try that. Getting a little tired of scrambled eggs, bacon and toast everyday.

For the veggies, maybe bell peppers, onion, mushrooms? Any suggestions?

The only proper way to serve grits is to feed them to a ruminant, and then eat said ruminant. ;)

Forget the grits. 
Grilled goat with a raspberry chipotle marinade or even better  goat curry is very tasty. :) ;D

I hope they are better than the one I made this morning. I should have mentioned the skillet needs to be on low heat.  ::)

I made some homemade tortillas a few times. Even bought on of the presses. Press was worthless. Ones I rolled out by hand were not pretty but tasty.

Tried a beef and bean burito from the store. On of the better ones. Warmed it while scrambling some eggs. Topped the burito with scrambled eggs, cheese, salsa and a dab of sour creme. Pretty good and fairly quick and easy.
Give me a new saw chain and I can find you a rock in a heartbeat.

Warm the tortillas a little before rolling. They'll be a little more pliable. A dry skillet works fine. Medium heat. Heat a little on one side, flip and heat until you see it just start to bubble up in a few spots. Good to eat just like that or with some butter. will make rolling the tacos much easier. (ok, burritos for all you folks not from Texas)
