This  cold weather is getting to me and I needed some confort food so I made a couple meatloaf. The sandwiches from leftovers were just as good. This is how I make them. digin_2 digin_2 digin_2

It looks so good!  Meatloaf is one of my favorites, and it's always better the second day.  It's wonderful to see a husband and wife team up in the kitchen.  :)

I made one, wrapped it up tight in foil and cooked it in the instant pot on the rack. Best I ever had. So moist and tender.
Give me a new saw chain and I can find you a rock in a heartbeat.

The  meatloaf sandwiches were great. It would have been baconless if I left it all to my wife. ;D She used to kick me out of the kitchen but now has some conditions that make it hard to perform certain tasks. Plus she teaches me a lot.  :)

That looks great.  Never heard of adding veggies to the mix.  Growing up in a large family, our meatloaf was the 4 cent ground beef and the heals of a few loaves of bread, egg and a little milk (for the bread).

I make mine now with ground turkey, ketchup, dehydrated chopped onion and a bunch of Italian bread crumbs.  If I remember, a little salt and pepper.  Never though of cooking potatoes in with the loaf - I'll have to try that.  I usually make mashed potatoes and I put my peas on top of them.

 :D :D :D coxy, your mama didn't bring you up right. A good meatloaf is the stuff of legends. I never much cared for mom's but Karen made one I could have lived on. I don't know what she did but man, was it good especially in a sandwich.
