I obtained a couple of 2 inch thick cookies of fresh cut and wet Red Elm and debarked them and cut them in half and cut out the center.  Should I just seal the top and bottom of the cookies or every side they were cut on also?  Thanks

Iron Man...Welcome to the Forum.
I live up north and have never been south where you are
but, did you slice the cookie so you now have 2 - 1" cookies?
Up at this end of town, I would keep it from drying too fast.
And I would not seal it.
I think If it wants to crack or split, it will do it with or without the sealer on.

Thank you for the reply.  I cut them across the diameter into 4 half circle pieces 2 inches thick.
