Christmas, dinner that is.  My inlaws asked if I'd be willing to smoke a turkey for dinner yesterday, hadn't done anything big on it but said I'd try.  Sacrificed a roast the other night as a trial run, then came to my senses and searched the food board here and came up with a "recipe" to try on the turkey.  It went in at 5:30 yesterday morning and came out at about 1 or so, I tried to keep it at a pretty steady 175* straight through but the wind came up a bit and the last hour was only around 140.  Oh well, everyone seemed to like it, had good smoke flavor (used apple wood), stayed good and moist, and as far as I know, no one is sick today from eating it  :D.  Tonight is my side of the family and it's soup night so my wife is on duty for this meal  :).  Merry Christmas everyone.
