Had a small basket of tomatoes that needed to be used. I decided on some sauce. Olive oil,  onion, garlic, basil, oregano, sugar, salt, skinless-seedless tomatoes. I put the tomatoes in a colander, one shaped like a cone with a wooden paddle, to remove skin and seeds and to pulp the meat of the tomato, once cooked enough to loosen the skins (15 min). I run them through twice. Had 10 lbs of tomatoes, and probably got 2 gallons to boil down. Took about 3 hrs on medium to condense to the right consistency, which is one's personal preference on that judgment. Made two pint jars.
