Great looking log cabin, I see many hours of hard work, but I will bet it was worth all the hard work.

What kind of mortar did you use for chinking? I did a repair job on an 1822 log cabin and used Portland, lime and fine sand and it has held up well.

I also used portland cement, lime and sand.  I used sand from my property.  I used white portland for the inside chinking and gray on the outside.

Logman, that looks great!  Is it on a slab?  If not how has the tile floor held up?  Looks good from the photos. :)
