As I type this getting grease on my keyboard, I am eating the last of the crappie that Ocklawaha boy gave me when in FL in Jan.
It is awsesome.
I use a batter that is made with our local pancake flour from  New Hope Mills in central NYS.
Dang it dont get no better than this!
Got to go, the second batch is going in the fryer.

Nothing against crappie and I've certainly cooked and eaten my share, but I'd rather have one of the various fishes that are known locally/collectively as "bream" anytime......

I'm with Thurlow. I'd prefer to have a big bluegill but crappie rate up there real high. For some reason lots of folks around here don't know how to cook and eat bone-in fish. I guess they eat rainbow trout. When I was growing up in N. Fla we'd eat bream just a few inches long. Grandma wanted them caught on a cane pole (so we always told them that is what we caught them on) and would fry them so crisp she'd eat she'd eat bones and tails and all. Crappie are sure a lot of fun to catch and a couple years ago I learned how to catch them with a fly rod using a small (1/64 oz) jig. That really makes it fun to catch. I usually give away all I catch to folks at or around the landing or use them for live bait for big Flathead catfish up here because my wife prefers them.

crappie are best caught in cold water. They have a firmer texture.

Just thinking about this thread makes me want some fried crappie and some hush puppies.  With cole slaw.

I will say everyone has their favorite it seems,  if crappie are biting, and even lil less than the southern slab crappie, hard to beat!
On the other hand the trash fish (black bass) as I've heard from a few northern folks, real close to the top for me, easy to catch and fills a platter ;D  The bream, perch, which they really are not, but local folks just don't know better, are real good, and real easy to put in a basket ;D and by the dozens,  just have a few extra sinkers, worms and a good hole to hit. The hybrids get big, red ears are hungry bout now.  Walleye, totally different class, when you get a three to four pounder, but the bigger the better.  Then there are the stripers, whites and hybrids, again, around here, these folks cut out the red meat, or grey which ever color it may be, not where I came from, the fillet goes in all in all.   Seafood fish are on in a different class, so this will be left alone for now.  and like was mentioned,  I will be going again real soon ;D  thanks for the spur ;D
only have a few chain saws I'm not suppose to use, but will at times, one dog Dolly, pretty good dog, just not sure what for yet,  working on getting the gardening back in order, and kinda thinking on maybe a small bbq bizz,  thinking about it,

Spent quality time with my son and a good friend over the weekend fishing for the above mentioned Walleye.
Caught 35 but only 5 keepers and several yellow perch.
Made for a great fish fry.
