I am building a cabin with 6"x8" square logs. They are mostly red pine with some white pine. My question is, would it be ok to cut 2 or more out of a large tree? I plan to mill then 1/2" over and sticker them for about 6 months.

Either have the pith centered in the sawn 'log' or have no pith present at all. Having the pith run down one side of a board will make it warp for sure. If your logs are big enough you should be OK cutting multiples, but either no pith or centred pith.
