I am constantly running out of ideas for dinner. Many nights I just eat cereal cause I ain't got time for making something...tonight it's lasagna that momma bear fixed. So whatcha eatin fer dinner?
Grilled Scottish Salmon. Garden squash cut in half length ways, topped with onions, baked in the oven, then covered with melted cheddar cheese. Baked potato with sour creme and butter. Garden tomato, cucumber, and onion salad.
Burgers on the grill.
Meat, bread, and no vegetables :D.
Don't forget the cheese.
Fried eggs, Grits, Sausage, & Toast/Jelly.

Lately it's been meatloaf that I never make twice the same way. Taco salad sometimes. Mix ground beef right into pasta instead of making meatballs, and I just put some chicken into balsamic vinegar to soak overnight, it'll go on the grill tomorrow

I wondered if there was something like that cause in my experience common everyday folk talk about supper but more classy people talk about dinner. I even have some friends that are sorta classy and have dinner while I'm having supper.

That's my favorite part! lol.

Sat and Sunday was left overs , and road trip Dinners.
Grilled chicken thighs and split breasts, mashed potatoes, lima beans, corn on the cob with Cajun spiced boiled peanuts after supper.
We had the most significant thunderstorm of the year during the 45 minutes it took for the chicken to cook. I was counting between lightening flashes- made it to three once. I was soaked to the bone (old saying) before supper was ready. Anyway, the chicken was good, must have been the combination of moist heat and cherry.

Breakfast of the Kings there WDH. I've made a pork roast that's cooked for 6+ hours with special flavorings, smokehouse beans supplemented with Great Northern beans, lemonade, veggie burgers, mac n cheese and potato salad. Oops, add some coleslaw to top off the pork sandwiches and we're good to go. We're celebrating our youngest daughters birthday with family tonight. Have fun and a great weekend.

I can't handle them either. We are having grilled chicken strips, salad and fresh fruit, it's just too DanG hot here to think of making a full on meal.

We just moved in a lady with two kids, under 40 years old and already twice divorced. I don't judge & I don't gloat or condescend, I just observe. Do feel kind of sad when young kids suffer the consequences of adult decisions.

I started the tritip this morning by working papain , oil, vinegar, and spices into the meat with a fork to get things tender. 15 minutes each side on very high heat Manzanita wood , then 15 minutes under a towel on the kitchen counter, then slice. Home alone tonight. Had a white sweetpotatoe sliced about 5/8" and boiled to almost done. Then drained and placed in a buttered dish and topped with a little cinnamon and more butter. Baked till done. Yum.
Pork in cast iron on a bed of oil, garlic, and dried mushrooms. The chili in the center is so hot we had to open ALL of the house windows to breathe at all.

I could go for that, I like spicy food although there is a limit. One of my favorite breakfasts is huevas rancheros with corn tortillas and black bean and corn salsa but I would have to learn how to make my own, Tex-Mex restaurants are hard to find here. Taco Bell doesn't count. :D

If I have peas I like mashed potatoes with them. Roll my peas over into the potatoes and scoop them up together. That way the peas don't roll around.

I cook pork chops on a cast iron skillet, just tickle it for a few min on one side, flip it over let it tickle it some more than take it off put on plate and tent it up for 5 min or so under tin foil and it makes nice juicy pork chops every time
my other half cooks it then recooks it and cooks it again she can even make a gal of olive oil dry :D :D :D :-X

Vidalia onions, garlic, nugget potatoes, carrots and butter were wrapped in aluminum foil and placed on the upper grill for 40 minutes. Rib grilling steak was seared then cooked 5 minutes per side over off burner, two were left on at medium heat. It was a feast. 8)

When I was growing up a friend of mine was Italian and his mother used to take the burdock stems, batter and fry them. What a great tasting treat. In the spring, dandelion salad was always on their menu. :)
Got some fresh caught salmon from Lake Ontario my friend gave to me gonna fry it on the skillet, any suggestions as to what to put on it/best way to cook it? Don't have much to work with here. Last time I just tossed it in the skillet with some EVOO and made it less cold and that worked ok but kinda wanna make like a sammich outta it or somethin more fancier than just a salmon fillet.
21. Are you sure that it was burdock? Normally Italians like the stems on Artichokes and Cardoon and my memories of the same, along with dandelion greens and even mustard greens, are quite fond. I had an uncle that would swing in from Chicago with everything from snails to smelts and my aunt would make fresh pasta every day. She would send me out into the woods to gather mushrooms and sassafras root for tea. Good stuff!

4x4 we are having alder smoked salmon tonight using a dry salt method in lieu of brine. But if you are going to cook it in a skillet, we have sear ours in a mix of butter and EVOO, once sprinkled liberally with McCormick fish and chicken seasoning. Once nicely seared on both sides, toss in a bit of dry vermouth and cap a lid on the skillet for just long enough to finish steaming the salmon. It should still be pink inside and will finish cooking. You do NOT want to overcook. Cold the next day is great in a sandwich. Served hot with salad and rice...yum

Starting over. pizza and Quish have one big thing in common: you can put a lot of things on/in them and the name remains the same. I sometimes put 15+ ingredients in my morning shakes, the vita mix doesn't care. Latest is chia seeds, very high in fiber, sold by Costco, but don't do it if you have diverticulosis.
I have to ask myself why I'm still using Siri, and the answer always is my thumbs are even more incompetent.
In NZ that would be called a "Bacon & Egg Pie", something that we used to have on the farm when doing hay, as it could be bought out to use working, and eaten in the field.
You can still buy a commercial single serve version in any gas station or corner store.
Veges and cheese are optional, but allowed, as is a lid on your pie.

pre-prepared frozen pie crust
handful of broccoli
bout a half up of grated cheese

bake at 375 for 35 min
pretty easy and as Ian said, they are great left over cold, if any is left over,

looks good I could eat that in the morning but not for dinner I just cant seem to eat eggs after 9am I get nauseous just thinking about them but love them in the AM

Nope, BEEF! Found it in the back of the freezer. Had a red tag on it that said managers special. So it had been discounted when it was bought in 2015 :D It actually was really really tender and good.

Baked ham, German (hot - at least first time it is served) potato salad, greenbean casserole.

Easter lunch consisted of mixed fruit (water melon, strawberries, grapes, cantaloupe, honeydew melon), yellow crookneck squash, collard greens, salad for those who like salad, mashed potatoes, ham, homemade cheesecake with blueberries on top, baked carrots, rolls and probably some other stuff.
The best part was that both of my parents were able to host my wife, our three daughters, a niece, son in law, daughter's boyfriend and myself. Like many families, some of our favorite times are spent laughing, telling tales and reminiscing around the supper table.
All of that good food robbed me of what little ambition I had today and an obligatory nap followed the mid-day meal.
Chicken legs. Big packs we're on sale. Them and thighs. Love them fried. Put extras in fridge and take them for lunch.

Wife fixed a deer neck while I was in the woods and at the mill today. Roast venison in mushroom soup gravy with carrots, onion, white & sweet taters. I came in and finished off the carrots, sweet taters and one chunk of white tater with a good sized chunk of deer meat. Will likely eat deer roast sandwiches next 2-3 days. I think she had canned corn on the side but I did not warm any up with my meal.
I haven't had a good walleye in over 30 years.
Used to walleye fish quite a bit.
Jeremy's boss is into fishing more than eating I guess. He dropped off these fresh fillets. Last year he gave us about 10 lbs of smoked salmon

Thanks to our Glaciated Friend, it was Troll Pie tonight. Marty came over but he had never heard of Troll Pie or Pasties so he was in for a treat. There was much kidding between him and the maker/baker, but he got himself a second helping and cleaned his plate. food6
Forgot to take my camera in with me but had a real nice lunch in Nomad's backyard while passing through today at a little restaurant and grill named Junior's on Hwy 17 (Main Street) just off I-95 in Jacksonville Fla. Had a big plate of fresh fried oysters, alligator tail, cheese grits, rice pilaf and hush puppies. Actually the oysters were much better than the gator IMHO but it was good to go to a fish place savvy enough to offer regular or cheese grits as a standard side dish. The waitress was real upbeat and really added a lot to the ambiance of the place and my wife commented that it shows she really likes what she is doing. We may stop by on the way back up later this week.

I was really surprised how good fried green tomatoes and squash are. Boiled squash is all i ever really had and ive kinda been blah on it my whole life. Fried squash is like onion rings.. Eat all i can get. Wish i planted more now.
Im not the greatest cook but been learning more in recent years. I think the trick to thicker meats is a good hot and fast sear. Burn the exterior and dont turn it if its stuck to the pan or grill, that means its not ready. Id say 2 to 4 minutes per side and then i back off the heat and cook until the internal temp is whatever it should be without cutting into it at all. If you cut or poke the juices just run out. I would rather cut it on the plate and decide it needs a few more minutes then cut to check color on the flame and then overcook the inside. Also letting it sit for 5 to 10 mins after coming off the fire really does something good inside.
With deer it helps to let steaks sit a few extra days in the fridge before cooking. I dont put them on until the red color turns to brown. I havent had a piece of gamey deer yet with this approach. No need for marinades, everything has been soft so far.
The leftover chunk of that pork loin got sliced up thin and butter fried then into spaghetti last night. Was also pretty good.

For us, the black berries are still green and about three weeks out. The black raspberries are in full swing. I was able to get 5 pints of jam from the last picking. Would have got more if not for the dang ice cream last few nights that needed some.

The wifes work often tosses a bunch of leftover catered food from pharmaceutical reps pushing their pills and she brings home what she can. This time it was baked potatoes and pulled pork.. Too much to even fit in a camper fridge.. So i mixed it all together with BBQ sauce into home fries. There was also some bacon and ground venison about to go bad so it went in the oven. Wish i had onions.

Its is a small bowl of Bluebell ice cream topped with very ripe and sweet mangos. My folks have two mango trees and the one that these mangos came from produces the sweetest and best textured mangos that I have ever had. That was the spoon in the bottom center of the picture.
Those same ripe mangos are also very good on top of blackened snapper (fyi).

Couldn't believe tenderloins were the cheapest meat in Costco at $2.49 a pound where ribs were 5.69 a pound and hamburger $3.59 a pound.
First batch of sauerkraut is done fermenting so time to break out the dogs. A little fresh dug potato salad , home made zucchini relish and beans with a plate of tomatoes, cukes, home made mozzarella, fresh basil, and aged balsamic vinegar.

You eat rather well! 8) I have seen pork tenderloin at under two dollars a pound Canadian, it is a real bargain and one of my favourite meats.
Same here as to the pork tenderloin. Very low cost but high quality meat. So tender. When brined and then rubbed with a little oil and your favorite rub, it is easy to cook perfectly in my air fryer in less than 8 minutes to 140 degrees flipping once during cooking. Fast and delicious. Mr. 21, those potatoes have to be the perfect accompaniment, Sir.
Those tenderloins melt in your mouth. We use a soy based marinade with lots of garlic. Picked up 6 double packs so still have 10 left in the freezer. As you say WDH 140 is the perfect temp to keep them moist and tender. We also do them in the instant pot with sauerkraut, onions, and apples. Nothing like fresh dug potatoes that are sweet as the sugars take a while to turn to starch.
Some more of the same garden veggies and a MEATLESS Beyond burger on the grill with some A1 sauce to make it look like meat. Never had one before and it actually surprised me. Tasted like and had the texture of a juicy burger. If they didn't cost twice as much as beef I probably would buy them again.

Last night: Grilled stuffed red peppers made with homemade sweet Italian sausage, green salad, grilled bread (leftover from Friday) rubbed with garlic. We also had one homemade sausage left, so we grilled that and shared it. It was a nice 'Kitchen Salad' because I used what I had; Iceberg lettuce, sliced cold fried chicken, carrot spears, quartered grapes, mozzarella cheese and topped with Tony's and thousand island with wheat thins. Yup, I love a good salad.
Given Howard's proclivity of harassing the squirrels and chipmunks while hunting deer, he will be eating a lot of venison-less salads too :D :D .

Steak is the good stuff, grass fed 18 month heifer, 1/2 Angus, 1/4 Hereford, 1/4 Fresian. Part time job doesn't pay great, but 1/2 a beef heifer is a good bonus, BTW, melt in the mouth tender... :)

No one has posted here for a while so time to keep it going. Tonight I lit up the Weber kettle for the first time ever in February. Hit 54 degrees so figured the woodchuck was right and time to get started grilling. Pulled a big garden spaghetti squash from last summer out of the root cellar and a couple bakers. Threw the squash and potatoes on first for about 45 minutes then 3 minutes on a side for tuna steaks. 😋 The taste of summer 4 months early. Loving this El Nino. Even warmer tomorrow :thumbsup: and the bison burgers are defrosting.

I fine flaked a 1/2 cup of groats and we tried them in the meatloaf instead of breadcrumbs. What awesome flavor and texture they added. Sandwiches the next day are my favorite also.
Tonight was chicken breast that was sliced fairly thin then beat with a tenderizing hammer smiley_smash. Breaded and fried. Some roasted garden butternut roasted with maple syrup along with last summers corn and Annies mac & cheese. Not very colorful but good. digin_2

We buy it from Costco online. Restaurant grade, individually packed, wild caught packed on the ships. It ships in 10 pound boxes with dry ice overnight. This batch has a light marinade and really good on the grill or griddle. They also have nice bison burgers and elk direct from the farm often. We only buy when they have special email sale. We find the frozen better quality then what local fish counters have. Doc said eat more fish so having a bunch in the freezer makes that possible. CDN $18/lb frozen up here at local Superstore. Have had frozen green beans yesterday from the garden, but had local fiddlehead greens today with tuna casserole. Picked last spring. Really, brook trout or Atlantic salmon is meant to go with fiddleheads. :) Been eating garden green from the grow tent. Lettuce, radish, spinach, basal, beat greens. Might have a red hot pepper before spring. Maybe even a cuke if I get the Qtips out as quick as they bloom, otherwise they won't fertilize. You have like 24 hrs.

Our supper was red beans and rice. I had about a quart of left over white rice, thawed, browned and crumbled about 2/3 lb of bulk/patty deer sausage, diced up a little onion, drained and dumped a can of red beans in, heated it all through and threw in a handful of dried cranberries and served with plantains on the side. food3
