I like the old-time recipes, most were simple, basic, tastey, and nourishing; this 'Indian Pudding' from American Civil War Cookbook:

3 cups milk
1/2 cup yellow cornmeal
1/4 tsp ground ginger
1/2 teaspoon salt
1/2 cup dark molasses
Piece of butter size of a small egg [3 tbsps]
   1 egg, well beaten

Bring the milk to a boil and slowly stir in the cornmeal. Add the ginger and salt and continue to beat for about 15 minutes until the cornmeal has thickened. Add the molasses, butter, and egg. Mix well and pour into a buttered baking dish. Bake in a moderate oven [350] for about 40 minutes. Serve the pudding warm, with whipped cream. Serves 2-4.
