Thinking of running 2, 1k gal septic tanks in a series. Run an air pump in the 2nd tank, then pump out to 2 or 3 sprinklers, rather then installing an aerobic tank. We are short on quality service people for maintenance and our ground would be better served i think with a sprinkle system. Thoughts? Thanks

Stink, stank, stunk is my first thought.  Second would be - is that even legal?  Land applied sewage has a ton of regulations that come with it.

I haven't checked here, but back home the sewage trucks wood spread the tank clean out on our fields

So whats the major differences with an aerobic tank and what a second wood be doing to break it down further

I can put in my own septic here

It's my understanding that the second tank is called a "dosing tank" for the system that you describe. Basically the treated discharge from the septic tank accumulates in the dosing tank and then your pumps turn on to send a specific amount to the field or sprinklers.
