i like soft boiled eggs, too.  hard boiled eggs with fresh eggs are kind of a nuisance, though!  gotta let them sit a while.

i guess i'm going to have to expand my cooking abilitites.

Maybe you can just move in with him, he already has a bunch at his place. ;D It's a good thing I live so far away or I would probably show up at Engineer's place. :D I love eggs too.  I got real luck, my wife, cooks, and has babies,  and has a catering business, and now a bakery/cafe. You need to find one like that. That way all you have to do is tend to the hen house and the sawmill. ;) ;D

This won't help with hard boil eggs,it will cool them off,but if you want to make potatoe salad put a bunch of ice cubes in a bowl with some water.Let this get as cold as you can,drain the water off the eggs and put them into the ice cold water.This helps alot if your eggs are fresh.

Slabs

Egg and olive sandwitches are great in the summer.

Boiled eggs diced (or smushed with a fork)
finely diced onions
Spanish olives diced (or smushed)
mayonnaise for binder

Another of Mom's successes.

I like the sound of eggs and olives.  I cannot say that I have ever had that combo, but it strikes me as a fine marriage.

That's definitely a love-it-or-hate-it mixture.  For me -  no_no  that's nasty.

Fried lettuce breakfast sandwich

Chop 1/4 head of lettuce into 1"pieces put in pan along with 2tbls of oil, start frying, add 1 carrot chopped into 1/2" pieces.
Scramble 3 eggs in cup add 2tbls of water anb 2tbls of butter. Add this to pan after lettuce is cooked.
Add spices and whatever you want.
Add 1/4 cup of cheese after eggs are cooked.
Cut into 4 pieces and put on bread and eat.

Hope this don't run grits out of business because grits and eggs are good too. :)

Lots and lots of eggs? In addition to some good recipes, I'd be thinking of ways to store eggs for times when the hens are not laying as well. Just a quick look around produced an interesting article in Mother Earth News:

  Went and picked some fiddle heads , some wild leek .................

  Cooked the fiddle heads , then let them cool off , this morning , got them out of the fridge , cut um up , got that wild leek , cut it up , put some butter in da pan , through the fiddle heads and leek inta da pan ,got them going , broke open a couples of aiggs and had me one hell of a good breakfast ....... :)

How to get around 'selling' eggs.....each neighbor that wants fresh eggs, "owns" a chicken and pays you $2.50 for feed each time they come to pick up their dozen eggs.   :)

What if you left them under the hen till she gets a good brood. Then ten or twelve weeks later fill your freezer with fryers.

If you really have more then you can use or give away, cook them up and feed them back to the chickens.
Now I don't mean to replace their feed with the eggs, but mixed with the feed shouldn't hurt anything.

i'll do that if they are really coming out of my ears.  i've fed several to the dog too.  I had one pull a humpty dumpty out of the fridge yesteray.  one holler for the dog fixed that :)

We have one chicken that lays thin shelled eggs from time to time.
I usually end up breaking those while cleaning them.
Also get a few that end up cracked too bad to keep for one reason or another.
I just crack them open in the dog dish and give a yell. ;D
Some of the dogs don't really care for them, but one just LOVES them!
