Ika Mata is a local dish from Rarotonga, and I'm getting withdrawals from the Islands.  I've tried it couple of times over there, but never made it myself.
But here goes  :D

First you need a whack of lemons (or limes), enough for about a cup of juice.


And some fish.


Cut the fish into small cubes.


And get it together with the lemon juice.


Cover, and into the fridge to marinate for a couple of hours.

That is the downside of travel - I can't make things taste the same!   :(   :D

It looks like Ika Mata may be related to Ceviche?

Similar idea, marinating the fish in citrus, but next stage is Coconut cream. Now it's marinated overnight I'll get on to that.

OK, it's marinated overnight...

Drain off the Lemon juice and throw in some red onion and capsicum.


Then add Coconut cream and a dash of Tabasco sauce


Kumara (Sweet Potato) salad to go with it.


Good to go.


Verdict?
Lil says it tastes a bit "fishy"...  ???  But she went back for seconds  :D

Anyway, it's one of the easier dishes you can make, and it's "Taste of the Islands" right there.  :)

Very interesting, although I've never seen coconut cream like that.  Then again, I've never looked for it.  ;D

So, were you satisfied with your version?

Yup.

If it was 10 deg warmer, and I couldn't see snow from the back door, it would be just like the Islands again  :D
