I was given a "maple" log a few weeks ago and today I finally got around to opening it up but I'm not convinced it's maple. Any ideas what species it is? Also, what has caused the grey/brown staining ?

Looks like maple from what I can see.  The graying is more than likely spalding.  Common in maple species, some more than others.  As to what kind of maple, you will need someone more experienced that me :P

Definitely maple, likely red maple.  The gray is a stain that is not fungal but is a chemical oxidation reduction reaction with the sugars in the wood that occurs when the humidity is high with no air flow.  This can be avoided with sawing immediately after felling and making sure that the stickered lumber gets good steady air flow.  It a log sits in the yard for a month or two here in Georgia, especially in summer, it is guaranteed to gray stain.  It does add a lot of character to maple, though.  Some like that, some don't.  It is a big seller for me if the gray stain occurs in the log as it ages.  Not so much if it gray stains in the stickered stack of sawn lumber because you get ugly zebra striped sticker stain that you cannot plane out.

Thank you to all that replied. I like the staining and was actually thinking of keeping a slab for myself.
At this rate I'm going to be keeping more than I sell 🤦‍♂️
