The only time I use the rollers is when cutting logs that are near the length limit of my mill.
I'll load the log hanging off the end a bit, then slide it up to the saw head on the rollers. I do this to avoid hitting the blade when loading the log.

If you are manual and have to turn your back on an unclamped log to jack up the toe roller, I would just use your tractor to slide the log.

I use the hydraulic toe-rollers on my mill several times a day to reposition logs and cants.  You can do without them, but they definitely save a lot grunting and groaning.
