Title: filet mignon

We just had moose tender loin for dinner. I don't know as I have ever had a better tasting piece of meat.
My dad had a saying when I was a lad that I heard a lot and thought of while eating the moose. "I wonder what the rich folks are eating tonight ?"

                                         butterfly the loin, add to pan when onion is almost cooked, about 2 minutes a side. Melt in your mouth delish! Sorry no finished pic, we ate it too fast!

We do something similar from time to time only we add garlic and sliced jalapeno peppers and roll the meat in flour before putting it in the pan.  Like you, there are usually no leftovers.
