One day a month or so ago, I had an epiphany. I had some left over Chili, but only a couple small bowls full, not really enough for a meal. What to do with it? Well, I though, many of the ingredients are what I might use in Pizza, so why not use it to make a pizza?  So I did, and it was awesome.  I thought I had created something new and unique, so I googled it. As it turns out, probably thousands of other people already had the idea. HOWEVER! I believe my version is the most unique and the MOST awesome because of two added ingredients. I caramelize a big sliced Vidalia Onion to add on top of the chili, and on top of that I spread a generous amount of Fritos corn chips.
Our favorite and specialized pizza has always been a chicken Pizza I make, but Tammy and I have both changed out minds, and this is now our hands down favorite. Of course my thick and rich venison Chili recipe has a lot to do with it, but now, we only eat one meal of the Chili and save the left over for making Pizza.  That's just what I did yesterday. For supper I made Pizza from Venison chili I had made earlier in the week.  :)

Looks tasty. Nice touch with the Vidalia onions. (You know they come from the same part of the country that grits come from so they have to be good.)

Tammy had left over leftover chili pizza for breakfast. I had a wrap with peppers onions and sausage. Held the egg and cheese this morning. I've got about 1 cup of chili left. Polish chili dogs on toated buns for supper!

It's easy Mike. Here is what I use for my base that I alter batch to batch depending on what I have fresh. This is the I gotta go buy the stuff version.

Brown one large chopped sweet onion. Add 1 lb bulk sage based breakfast sausage, 1 lb hamburger to the browning bin along with a couple stalks of chopped celery.   Season with some salt and pepper. When cooked to your satisfaction drain any grease.

Add 3 cans Italian stewed tomatoes, one can store brand tomato soup, 2 cans dark or light kidney beans, 2 cans tomato sauce, One small can of mild old elpaso chilies, and about 1-2 tablespoons chili powder. I also add a sprinkle of tonys cajun seasoning but only a sprinkle because Tammy does not do heat.  I add jalapenos to my bowl. If it were just me they would go in da pot.

Simmer awhile, or eat it. As with most muti ingredient soups, its always better later.

This is a very good chili seasoning mix found in most grocery stores:  Carroll Shelby's Chili Kit.
