I had about a dozen very ripe tomatoes I needed to do something with, so since today was a cold wet day, I made chili out of them for supper. Tammy and Stacy said it was "amazing". I'd not go that far, but it was pretty good. :)

Last night Jeremy say's "I could go for some Chili"  So I went out to the kitchen and spied about a dozen tomatoes still setting on the cupboard.  Found some frozen ground beef a big sweet onion, and a can of kidney beans and went to work.
Frozen ground beef works great. You put it right in the bottom of the pot, dump the cut up onions in there, turn the fire on very low, and cover. Once you get some juices thawed and going, you turn the burner up to about medium. As the meat cooks, you just keep checking and turning and flaking off meat. I drain it when it is not quite done, and then turn the heat up to start a little browning action. By using frozen cooked this way, you get some chunky hamburger bites.

I de-stemed the tomatoes and cut them into a big mixing bowl, skins, seeds and all. I then added about a tablespoon of dried sweet basil,a teaspoon of salt, a half teaspoon of black pepper and I'd say about 4 or 5 tablespoons of Chili Powder.  I took a hand chopper and chopped all the spices into the tomatoes and dumped into that, two cans of tomato soup, and the can of kidney beans.  Once the beef was browned to the point where the onions it was cooking with were starting to caramelize a bit, I drained it off again, and then added my mixture in the bowl to the pot. I turned the heat up to high, and stirred until everything came to a boil. I then reduced the heat to a very low simmer with the cover on, and cooked it for about an hour until Tammy got home from work.  She stopped at the store to pick up crackers, and they had a sale on something called Premium mini saltines, which you see in the picture.  :)

Patti went to visit her dad for a couple days so I'm on my own. She left me a big bowl of chili and I'm not complaining. Ground beef in chucks like Jeff said. Chopped green peppers and onions. Kidney beans and spices. Stewed tomatoes and you have a meal in a bowl.

Man ya'll sure making me want chill now, We use alot of Deer meat around here & chill is one thing I like to put it in.

Jeff

Absolutely! I've not had any venison burger for awhile. Our property in the U.P. is high in predators and low in deer. No doe permits are given and bucks are few and far between. Things are getting better slowly of late, probably due to very mild winters.  It was a winter from hell in the mid 90's that pretty much wiped the deer out in our area and they just have not recovered since.   Venison Chili is the best. :)

We made our first batch of the season when it turned cool last week. Venison, dried beans, and home-canned tomatoes came together in a beautiful synergy with jalapenos, bell peppers, onion, garlic, salt, and various other seasonings. Every batch is different, because I don't use (or have) a recipe. This one was one of the better batches. Yum! No pictures, it's all gone :D

if you're ever looking for a nice twist with venison chili (or beef for that matter), try adding some sweet italian sausage. Cut up a couple links and brown it with the venison. I usually remove the casings before browning. I've tried hot Italian sausage, but the sweet compliments the venison w/o overpowering it better than the hot in my opinion

I can't locate the Emeril sound effect button to describe the flavor burst. Jeff, a little help here? lol

Sorry Jeff

I guess we kind of typed over eachother.

To answer your question, nope I've never seen it done. My thought was to first smoke a brisket. Then throw that in with the rest of the ingredients and give it a smoke for a few hours instead of on the stove top.

Just sounds like it'd be a good fit to me.

I have been craving a batch of good homemade chili ever since Jeff posted his plans on post 31 here on this thread and before Miz Tammi changed it for him on reply 34. :D So today when my wife asked me what I wanted to eat I told her and, miracle of miracles, she agreed. She dug out several packs of old venison burgers we needed to use up, a can of mild Ro-tel, a can of tomato puree, a can or two of crushed tomatoes, 3 cans of red beans, onion, garlic, lots of chili powder, salt and pepper and into a well seasoned cast iron Dutch oven on our gas range and simmered it all till thick. While I ate a big bowl full Sampson and I had a hearty argument over who was supposed to get the Ritz crackers so we compromised. I topped it all off with a heaped up stadium cup full of fresh brewed unsweetened Ice tea and it was so good I even poured up what was left over and washed the pan. I am just too good to that woman. ::)

I make mine with a can of the Chipotle peppers with the sauce...Mmmm...gives it a smokey flavor but I only simmer it with the peppers in about 15 minutes and remove them. I might take one or two to dice up in the mix but any more than that will make it too spicy for me....just enough to get a little sweat going but not enough to kill my taste buds for a day.

I smoked beans with tomato, corn, onion and bacon as my first smoker test meal and it was great so id planned to try it again, adjusted as a little more of a hearty chilli insteada baked beans. But its been rain all week so i crock potted it instead.
Sirloin cubed up and fried with scissored up bacon.  Drained the grease and dumped it in along with canned beans and chilli (im not ready to try chilli from scratch yet) tri color peppers, onions, tomato, corn, tons of seasoning, some chicken broth.  Was really good over white rice with cheddar and some sour cream.  Had another bowl with tortilla chips crunched in.. Excellent.

When I was a very young kid back in KS, a family lived behind my Grandmas house (where we lived during and directly after the war), they were very poor, not much for clothes, lived in what should have been a garage/storage building, etc..
I was out back in the alley playing and one of those kids, a boy my age came out with a chicken leg knawing on it- as a treat I guess? By chicken leg I don't mean the drumstick either-I mean that nasty yellow skin with the foot on it. About 75 years ago and I've never forgotten that kids treat.
I worked in groceries and meat packing yet never did I see chicken heads in a tray for sale. Walmart has necks and some other treats but no heads.

I have never had a chicken head, but the 'scratchers" were always included in a pot of chicken & dumplin's.  Mom would boil them and remove the outside skin and toe nails/claws.  The skin underneath was tender.  Not much meat but if that was between you and hungry, you ate it.  The backbone didn't have much meat either but the necks did.  Squirrel dumplin's always included the head.

I don't recall ever seeing/eating chicken chili.

Not sure abbout the heads but I have had chicken feet at a Chinese restaurant, they were alright. When our ancestors got hungry enough nothing went to waste.

My Dad liked them.  I never took a shine to any.

Been kinda wet and winter like out for a couple days figured it was a good night to make a batch. Hope it tastes as good as it smells.

That absolutely looks tasty! Nice job! We are in a cold streak here and it's time to make another pot of deer chili!

Chili is a food I could nearly live on?
A Mexican-American girl we knew in KS always ate her USA style chili in a bowl with a fried egg thrown on top and some cheese too. Try that-it's VG!
Another even more healthy feature in chili is to slice some avocado into the bowl after filling it up. Mexican crumbling cheese, hominy, sweet corn, and tortilla chips all add a nice touch as well. As I've said, we use every sort of dry bean known in chili. Frozen after we've eaten part of a bean pot as it's own meal, any leftover bean adds flavor to chili.
I'll stick with either cornbread or tortilla chips-you can keep yer garlicky toast. We haven't had Tamale Pie for a while-maybe the cook will agree? She doesn't like it as much as me though.
