Shrimp & Artichoke Lemon Pasta

This was amazing. I dug in the cupboards & freezer last night and concocted this amazing dish!

Big Pot of Water on to boil for the pasta...

I used Lemon Flavored Linguini

1 large Red Onion
6-8 Crushed cloves of garlic

Saute this in 3 or 4 TBLS of Olive Oil

1 Can Artichoke Hearts (drain and chop in 1/2)
3-4 Tbls of lemon juice
2Tbls Butter
Fresh ground pepper sprinkled on top


Add this to the onion & garlic mixture, and you might want to add just a couple more TBLS of Olive oil & heat thru. (at this point your pasta should be on to boil. I used lemon pasta flavored lingini)

1 1/2 C of White wine--Add to the artichoke & onions, bring to a boil.
12-15 Big Shrimp (peeled) Cook shrimp in the sauce for 3 minutes (don't over cook)
2-3 Tbls of Capers

Serve over the pasta. Shred fresh parmesan and sprinkle over the top....Yum!
