Goat shank recipe, great for venison too!

Found this recipe and tried it on venison roast..fine eating! "Goat shanks with prunes, shallots, and Brandy.".

2 goat shanks or three lb. roast of venison
1 tbs. olive oil
salt & pepper
1/2 lb. shallots, chopped
6 cloves garlic, minced
3/4 cup prunes, minced
1/3 cup brandy
1 cup beef broth
1 cup white wine
1 sprig rosemary
1 bay leaf

Pre-heat oven to 325. Brown goat-shanks or vension roast on all sides in heavy Dutch oven. Salt & pepper liberally and set aside.
Heat a little olive oil in same Dutch oven. Cook shallots and garlic until softened and fragrant. Add the minced prunes and cook, stirring, for three or four minutes. Add the brandy and stir to deglaze.

Place goat or venison on shallot and prune mixture in the Dutch oven. Pour the white wine and broth over top and bring to a light simmer. Add the rosemary and bay leaf. Cover and bake in oven for two hours.

When the meat is tender and pulling away from the bone, remove from oven. Put meat on a plate, cover with foil and keep warm. Scrape out the shallot and prune mixture and puree. Return to dutch oven over medium heat and stir. If the sauce is very thick, thin with wine or broth. You may taste and season with salt and pepper.

Couldn't find goats shanks but venison cooked to this recipe....outstanding!
