Center biscuits and Soakies

    When my grandkids come up for a visit or stay overnight my wife normally will get up and fix a big breakfast with grits and bacon and biscuits. Since I prefer the center biscuits with no crust around the edge when she puts the pan of biscuits on the table I will reach over and pull out the center biscuit. Sometimes there is 2-3 and I'll get a couple. My grandkids make a big game of "stealing" my biscuit and keeping them or giving them to my daughter who also says she likes them best. I have given many stern warnings about such conduct but it has not seemed to help. ffcheesy

    Yesterday my daughter was talking to us as she was taking our 5 y/o granddaughter to a friends birthday party and they stopped at the drive through of a a Bojangles there in Charlotte NC to get breakfast. In the background when the lady asked if she could take their order I could hear my GD saying "I'd like a center biscuit please." I don't know what the lady at Bojangles thought but I bet my GD got herself a center biscuit. ffcheesy

   While I am thinking of biscuits I remember my MIL and her younger sister would both take the crust off their biscuits and put it in a half filled cup of coffee and let it soak up the coffee. I remember they'd eat their "Soakies" as they called them with a spoon. Since I don't drink coffee I never found out if that was a good idea or not but I guess it was the way they grew up.

A perfect biscuit for me has crust all of the way around.  Instead of in a pan, PatD bakes biscuits on a flat iron griddle so they are all fairly crusty and perfect.

    That sounds like the same style of cast iron skillet my wife uses. All the biscuits have crust all the way around except 1-2 in the middle.

Must be pan biscuits rather than individual biscuits from a dollop of biscuit dough.

   She roughly shapes them in her hand and places them on the flat skillet and pats them down a little more. Where they are close when they rise the edges touch and no crust. The outer circumference is a MagicMan crusty biscuit but the inner side is soft and the inner center one(s) is/are soft all the way around.
