I went to help cook jambalaya for those affected by Hurricane Ida on Sunday.  Normally, I would be cooking a pot but I am still down on stamina after a bout with covid.  We cooked jambalaya in the morning to be served for lunch and more to be served that evening.  All together we cooked 1800 plates of jambalaya Sunday.  2 pots in the morning and 4 pots for the evening.  All ingredients and supplies were donated.  We are just 1 group out of many that have/will cook to help this community get back to normal.

Below is a couple photos

2 pots loaded and ready for delivery.  70 lbs of rice cooked in the pot on the left and 40 lbs in the pot on the right.

Normally I would take more photos but for some reason I didn't take any.  I had to get these from my friend.

Surely your efforts were appreciated by many, very commendable. Great to hear of everything being donated.

Now about those pots you have, up in these parts those are classified as barrels  :D  :D . Wow those are some big ones, look well seasoned too.

Actually, the bigger pot is a ~36" pipe cap.  Got it before it was used.  Ground the inside and seasoned it.

I took my, then, 10 y/o son down with me to help clean up after Hugo hit Charleston SC and well remember a church group from Louisiana were were one of the first on the scene with a mobile kitchen they set which came equipped to cook 10,000 meals. I think once they arrived they got a lot of donated stuff from people who had lost power and freezer and it was going to be lost and they fed even more. They had a curfew after dark so we hunkered down at a church parking lot expecting to eat a cold meal but they insisted we eat with them and a hot meal was very much appreciated after a long day cutting and dragging tree tops and such. Well done. Keep up the good work there.

I wanted to make a bigger Original Post but it got too late.  Extra added below.

After we cleaned up, we sat around cooling off and sipping on some cold ones.  One of the guys brought up that we were in Lake Charles last year cooking for Hurricane Laura.  Exactly 1 year ago, we cooked 2 pots on Saturday evening, 5 pots Sunday for lunch and 4 pots Labor Day Monday for Lunch.  Saturday and Sunday we cooked 90 lbs of white beans each day to be served with the jambalaya.

Getting everything ready to cook jambalaya Saturday before Labor Day 2020 in Lake Charles.

2 weeks later we went to Sulphur, LA and cooked 4 pots of jambalaya and 80 lbs of beans.

Serving jambalaya

We were set up right next to a main highway and the they just pulled up to get served.

Also did hamburgers for those that didn't want jambalaya.

I think I will make a thread in the Food section using photos to show how to cook a jambalaya.

We worked quite a while in Bogalusa LA during Katrina and stayed in an American Legion gym/ballroom there.  Once the neighbors got their feet under them they brought some jambalaya to us.  It was some great food!
Great job on such service to others!  I was in both of those places right after Katrina when Rita came in.  Stayed in a ballroom of a casino on cots.
