Mini Corn Dogs

Great appetizers or just make a bunch for your kids-


Mini Corn Dogs

1-cup all-purpose flour
2 Tablespoons yellow corn meal
1 ½ teaspoons baking powder
¼ teaspoon salt
Dash of onion powder
3 teaspoons Crisco shortening
¾ cup milk
1 egg
1 package "little smokies"
Oil for frying
Ketchup or spicy mustard

In a small bowl, combine the flour, cornmeal, baking powder, salt, and onion powder. Cut in the shortening with a fork until crumbly. Wisk milk and egg, stir into flour mixture just until moistened. Dip smokies into batter and fry at medium high heated oil in a cast iron skillet or Dutch oven. Fry a few at a time until golden brown and crispy then drain on paper towel and serve with ketchup and/or mustard. Better cook a bunch as these go fast.

Those sound real good pappy. I haven't had a good corn dog since I ate one at the Iowa State Fair a few years ago. I keep trying them to find just that taste that I remember  ::)   

Can you use regular hotdogs with your recipe as well?

Absolutely, you should just make a double batch and add the stick. Cook at a slightly lower heat as it will take a little longer for the batter to cook through. The best corn dogs are made with already boiled/cooked hot dogs and a little thinner batter. Crispy and the dog is already cooked so it's faster too.
