Looked in the fridge and spotted about a quart of left over rice and about a cup of leftover whole kernel corn. We were out of sausage or I'd have made some red beans and rice and thrown the corn in for good measure. Instead I opened a can of corned beef and threw in in the cast iron skillet with about a tablespoon of diced onions. Then I added the corn and rice, seasoned with salt, pepper, a jigger of soy sauce and some liquid smoke and a little hot sauce for good measure.

In all honesty it is probably better than the average prison meal but not something you are likely to see Gordon Ramsey serving at one of his restaurants any time soon. :D The liquid smoke was a mistake - gave it a sort of scorched taste. ::)

Any of you have some real good throw together meals you have tried and like?

:D Living alone I do that frequently. I'll do something like that, pour leftover pasta sauce on it and I'm good to go.

Gerald,

It wasn't that bad so Sampson did not get a treat off it. Not terrible but was one of those meals that sounded better in the planning stage than it turned out in execution. :D Maybe if I'd had some of Sawguy's pasta sauce it would have been a gourmet feast. :D :D Maybe I should have grated some cheese over it and nuked it or tossed it in the oven for a few minutes and spread it on some pizza dough or such?
