Pear Preserves

   We have a little wild pear tree on the upper side of our pasture. The pears are small - about the size of an egg - and pretty hard. Usually it only has a handful of pears on it and I might eat 1-2 as I ride my AYV by but this year the limbs were hanging with them so I went up and harvested half a 50 lb feed sack full and brought them back and peeled and cut them up. I had about 9-1/2 quarts of pieces My wife likes pear preserves so I measured them, added 4 lbs (9 cups?) of sugar, 7 tablespoons of lemon juice,  and a couple quarts of water and cooked them about 2 hours once they started boiling. It made 12 pints of preserves.

 Now for some hot biscuits!

Are they the Seckel Pears you use? We love them and recently planted a couple trees. Can't wait to try this.

That took a while to peel.  ;)
We did a bunch of peaches one year. Seem like it took forever to get them ready. They was small ones, as your pears was.

   Wasn't that many but yes it took a long time to peel and cut up. It was half of a 50 lb feed sack. Of course they are heavier than the feed that came in the sack.

My favorite way to preserve fruit is with sugar and yeast. 
'98 LT40HDD/Lombardini, Case 580L, Cat D4C, JD 3032 tractor, JD 5410 tractor, Husky 346, 372 and 562XP's. Stihl MS180 and MS361, 1998 and 2006 3/4 Ton 5.9 Cummins 4x4's, 1989 Dodge D100 w/ 318, and a 1966 Chevy C60 w/ dump bed.

   To each his own. :D That would have probably been a lot easier than the way I did mine. ;)

I doubt it. The same prep work along with primary fermentation, secondary fermentation, racking off the wine a few times to get rid of the solids and sediment, then aging and finally bottling.

Oh, I missed the distillation step and figured for that the pears would just be crushed and fermented them the mash would be worked up. ;D

Lee, sometimes I'm a bit slow. I'm sitting here thinking "why would anyone add yeast to pear preserves" ::) :D :D

I tend to preserve fruit in a liquid form.

A former boss made wine from scratch. If he got a batch he didn't like he would freeze it in cake pans, pour the alcohol off which fortified the good stuff. He made a delicious pear wine that had a real kick. ;D
