Projects using greenish quartersawn oak?

I have seen some projects such as a korean style flooring use greenish wood successfully.  I am wondering since quartersawn oak is supposed to be very dimensionally stable if using it air dried for a couple months (so still "greenish") or solar kilned is a decent idea or no.  

I have a couple of 36'' oak logs i want to quarter and saw for making some table tops.  I had planned on attaching them to the legs with sliding dovetails which should (may?) restrain against some cupping.

here is the link to the korean floor i was referring to.  most are flat sawn it looks like but the last pieces are quarter sawn.  i assume it all wasnt quartersawn because flatsawn is cheaper
