i have 8x8 Dougfir rafters running on top of two bents the ends are over hung 2 ft on each end. these are no kiln dried. do i need to worry about the ends checking as it dries can anything be applied to minimize it?

Yes it is something to be concerned about, it is best done at the cutting bench if you are going to do something, the end grain dries fast and sets up the minor checks that then grow. It depends on the final finish but anything you can put on the end grain to slow down drying that is compatible with the final finish is going to help.

any recommendation for treating this structure? oil? stain?

You can use something as cheap as a deck stain or as expensive as a log home stain like Sikkens makes, Cetol line of products.

they sure do run the gambit in price. linseed oil seems like a fine choice but i wonder if there are uv blockers you could add to it for the parts that bake in the sun.

i guess i should have been thinking about this earlier so as to coat the end cuts before i put it together.
