Round about, I usually cut an inch thickness per foot of average width.
Quarter saw them. Wait, that would be way too much work with a chainsaw mill. Those are definitely nice looking logs!

Goose. I think with a small mill, and such a big tree, i would split in four quarters. The question is, Hand splitting, with wedges and mauls. Start with a chainsaw, and finish with wedges? Full chainsaw split or you have a conical screw on a mini digger? The later would ne my solution of choice! :D

I could quarter them on the trailer but i need it to go get a great big soft maple.
I have some wood workers looking for bar top's and fire place mantel's will talk to them befor I cut them up.
When I role them off the trailer Nancy will be all over me to get those DanG things cut up and off her yard.

You don't have to cut all of them to the same thickness. Give your customers more choices. ;)
Looks like burr oak to me, if the leaves are rounded on the tips its bur oak, red oak has pointy tips. Steve

DanG I have a guy comeing out in the morning he can deside what he wants but he will pay for all 11 feet

Not knowing what your market is and the equipment you have available the following may be all wrong for you.
I would saw five 2-1/2" to 3" slabs out of the center then saw both outer pieces in half and then saw trying for the good fleck especially in the bottom log.
