These trees got blown into the leaning position during hurricane Helene. My question is will the log portion develop stress in them if cut them in the spring or do they need to come down soon ?

I would not be concerned about it.  I would deem that leaning stress as temporary and should relax after the trees are felled.  I have never seen a problem with trees being supported by the rootball or limbs.

Stress comes from the annual growth layers added annually, for the most part.
