Title: French Toast PB&J

Here's one for the kids and grandkids, maybe even you.

French Toast PB&J

1 large egg
1-tablespoon milk
¼ teaspoon cinnamon
Pinch salt
2 slices of whole wheat bread
2 tablespoons peanut butter
1-tablespoon fruit jam
1-tablespoon butter
Powdered sugar

In a wide, shallow bowl, whisk together the egg, milk, cinnamon and salt. Use the bread, peanut butter and jam to make a PB&J sandwich. Spread half of the peanut butter on each side of the bread and then spread the jam in the middle. Soak the sandwich in the egg/milk mixture for 2 minutes per side, pressing gently with a fork to help absorb the milk and egg evenly.

In a medium sized cast iron skillet or fry pan, melt ½ the butter over medium heat. Spread the other half of the butter on the up side of the sandwich. Add the sandwich and fry until the bottom is lightly brown. Flip sandwich and fry until browned on the second side. Serve sprinkled with powered sugar. Makes one (1) French Toast PB&J sandwich.

We eat a simplified version of that around here that we just call a grilled peanut butter and jelly sandwich.  Just butter the outside of your pbj sandwich, and make it just like you would a grilled cheese.

I bet these methods work well for peanut butter and banana sandwiches too.  YUMMY!
