my wife makes the best potato soup. its really good the next day. another favorite of mine is an invention of mine... I call it holiday pie. after thanksgiving and Christmas we put all the leftovers mixed together in a pie crust. mashed tators, homemade noodles, turkey, stuffing, sweet potatoes, green bean casseroles, and anything else that isn't desert.
I've used my 'Braised Goat Shank' recipe on some venison roasts this winter. The latest adventure, I could not get the brandy-prune-shallot sauce to a consistency we wanted. Yet, the meat was tender tasty, but allowing to set in roaster and the fridge 24 hours did the trick. Especially, the cold cuts of sliced prune-brandied venison/horseradish sauce sandwich was special!
Pizza eaten cold for a fast and tasty meal on the go and so is a leg of chicken. Pumpkin pie is a good leftover to have for breakfast.

Got to go with the Spaghetti. My wife didn't used to like my spaghetti, because it gave her horrible heart burn, (store bought sauce). Then I started growing all my own tomatoes, and now she loves it, as there is so little acid in fresh tomatoes. I puree them in the food processor, freeze the puree in gallon zip lock freezer bags, and then use that as my base to make "fresh" spaghetti all year long. Soup is my next favorite. Always better the second day.
Hard to say. I tend to repurpose most leftovers into something else. Mashed potatoes get turned into potato pancakes. Left over meats, especially off the grill go into Vietnamese noodle soup, etc. Soups and stews are better the next day. Cold fried chicken is always good. And left over pizza is great. Had some of that forlunch today.
Stew and lasagna would be 2 of my favorite leftovers. My wife is a bit of a master in the kitchen so many of our leftovers get repurposed into something else. We rarely throw out any food. My thinking is that if you like this, this and this there is a pretty good chance it will be good all thrown together.
Cold pizza and warm beer :D
Some things do get better with age- pot roast comes to mind. I've been known to make it one day, and not even serve it until the next day.
Ham and beans, cold fried chicken, with extra salt! and a steak samich with mayo and pepper, david
Bacon....... for BLTs!
Seafood chowder with haddock, scollops, lobster, potatoes and what ever else she puts in there.
Its one of those better the next day things.
Panfried or broiled haddock reheated, I make a toasted sandwich with cheese and catchup.

Saturday night I had a 12 oz prime rib. Pat had more roasted shrimp than she could eat so I helped her and ended up with about ½ of my prime rib in a to-go box.
Today I split it in half, laid the two halves on a bun and into the toaster for a quick warmup. I had one fine prime rib poboy sandwich.

:D That was my theory when I was single. A big pot of chili or spaghetti sauce went a long way. So did pot roast. Karen sometimes thinks I'm jerking her chain when I enjoy left overs so much, 40 years of batching taught me not to be picky. Mom would thinly slice roast beef and heat it up in the frying pan in it's own gravy. She couldn't figure out why I liked it so much.

We had fried shrimp, broccoli slaw and left over potato soup for dinner tonight. I don't know that you could still call it potato soup though. I mixed in the remaining corn meal breading and the milk/egg wash from the shrimp, some chopped green onions and made hush tots. Still had some of that left. tomorrow morning I will cook some bacon and add that to the mix and make potato pancakes. will have the left over fried shrimp in a po'boy for lunch on home made rolls.

I am still thinking about Pineywood's "Banana Pudding". That man just ain't right. He knew full well that I did not have any banana pudding, and now I want some. food6

Canadian chop suey is with hamburg, mushrooms, macaroni, onion, pepper, spaghetti sauce, I also add black beans and cheeses, sprinkle a little sugar in the sauce. ;D

Diane is a great salad maker, the other night she made a very nice greens salad and topped it with leftover slices of cold venison roast and pan fried corn.

That is much different from a bowl of hot chili. It was spicy and flavorful but hot necessarily "pepper" hot, and yes, it would float a spoon. food6 ;D

:D I hear ya Ernie. Back in my single days I would have starved to death if it were not for leftovers. The women took pity on my neglected bod and would send me home with a doggy bag, it was great. About the only one I really don't care for is cold pizza the following day although I will eat it, crust becomes tough.
Well at least Cfarm has some soft cheese for leftovers. I think his leftover steak will be a little tough cold the next day. :D :D

Ernie,lemon meringue pie. I can hear my Mother tell me the lemon meringue pie story. My Mother made a lemon meringue pie and set it on the edge of the sideboard. She looked at it and saw 3-4 little places on it that did not look right. I was young and could just about reach the counter, I had stuck my little fingers on top of the meringue.
The pie gene usually expresses itself at a very young age. :D
And the pie story expresses itself at an old age too. :D
Back in the day, the dragon (MIL) would come to stay for a couple of days every now and then, the only reason I allowed the visits was the lemon meringue pies she would bring, one for the family and one for me. Mine was gone first and I usually managed to score at least one piece from the family one:)
Venison Chili, any kind of stew. I like to make big 'ol hearty soups with a turkey carcass or monster ham bone after a holiday dinner.
I was was once related to a guy (thru one of my ex's), that would not touch left-over food. He stuck that nose in the air and insisted it was beneath him to eat anything that was not fresh made the 1st time. I just sat there aghast till I realized my head was cocked to one side and my jaw was drobbed open...I couldn't respond without making trouble :-X :o
We always cook more breaded venison (pan fried) than a meals worth, I'm big on steak sandwich the next day. Of course meatloaf sandwiches too! And I'll add a vote for cold corn on the cob, which I would have never imagined until years ago when an employee brought to work some coated lightly with sour cream and chili powder. It's yummy. Now I'm hungry!
I just downed that last bowl of chile and I microwaved that last King Cake to polished it off. Both were fine leftovers. ;D

boiled down a leftover smoked chicken carcase
Added in leftover jimmy dean and Italian sausage, also smoked from making pizzas.
2 potatoes
carrots
celery
peppers and onions
simmered for 20 minutes, took it off the heat and added kale and broccoli.
shake in some cumin, chipotle, garlic, salt and pepper.
Tasty, tasty, tasty!

Left-Over "boiled dinner" is good to the last drop!
Boiled Dinner for those that don't know starts out with cut up potatoes, lots of cut up onions, lots of cabbage, some turnip, lots of carrots, a ham (some cut up in serving sized pieces) and the bone with lots of meat still on it is added also, for the extra flavor!
Put everything in a big pot or roasting pan (a LARGE crockpot is a nice substitute) add water until everything is covered.
Put the pot in the oven and cook all day!!!!!!!

Oyster Rockefeller, just as good the next two warm ups. Lots of good stuff like real butter, real cream, and real bread crumbs, taters, smoked oysters with the juice........everything real, right down to the onion and garlic. :D mmm Oh, my goodness. ;D

I actually never cared for it myself. I have had it from a can as well and could tolerate it for a sandwich. In fact ate a few canned corned beef sandwiches on long woods hikes into remote trout fishing holes. ;D
As a young stockman the cook would send us off each morning with corned beef, pickles and cheese sandwich's. I used to think not again when I'd pull the melted sandwich's out of the saddle bag in the heat of summer. :(
These days my wife cooks a corned beef on Sunday nights for lunch meat to last me the week at work. Things have changed with air conditioned cars and coolers :)

Last night we took the left over corned beef from Sunday and made a Ruben casserole. First time I've had it and was very DELISH!
Sounds interesting. Do tell more.
Line a casserole dish with a layer of flattened Pillsbury crescent rolls.
Bake at 375 for 9 minutes or until browned.
Take a bag of sauerkraut drain then mix in 1000 island dressing. This wasn't measured, We did it to taste.
Spread that out on top of the browned dough then put 1/2 brick of sliced swiss cheese on top. We had a 8oz brick and used that.
Put sliced corned beef or left over Easter meat on top of that then more Swiss cheese [the other 1/2] brick.
Cover with layer of cresent roll, egg wash, then sprinkle caraway seeds over it.
Bake at 375 for 30 minutes.

I make about 6 lbs in two loaves, eat about 1 lb, save about 2 lbs in the fridge for the next couple days and slice and portion wrap the rest in tin foil and freeze it.
I can have a meatloaf sandwich or dinner after 2 minutes in the microwave weeks later.

A lot of us found ways to make food stretch when times were tough. ::) MM you are leading a sheltered life, no corned beef or kraut. What is this? :D Good kraut can be pretty strong, it generally needs to be rinsed before serving. Try it warmed with bratwurst or pork hocks and a grainy mustard. YUMMM.
Corn beef,only had it a couple times. Did not like it. Maybe because it has corn in it. ;D
Us northerners are safe, no corn in it. ;D It is actually beef cured with 'corns' of salt. Get it fresh from a good deli, you might change your mind.
I once read that true corned beef came from a steer or heifer that was kept confined and given very little water and plenty of corn and that it was illegal to produce in the US because it was considered animal cruelity. But watching the Food Network that must not be true.
And Kiddo'es on whoever mentioned Sour Kraut with Sausage. Yum. Just got to have plenty of water afterwords. Even red Kraut was very good for you digestive tract. Seems like the bacteria in it keeps the old digestive tract supplied with good bacteria.
Try chunking up some taters in your sausage and kraut. Lindy also puts brown sugar in it to knock back a little on the sour bite. Lot's of black pepper. Good stuff when made with a nice spicy sausage. Usually ain't no leftovers though.

Kinda just thrown together. First fry up 1lb or so of burger. Drain it and put that in the bottom of a 9x13. Pour one large can of cream of mushroom soup over it. I like green beans and corn on top of that and the rest of the soup on top of that. Then heep it up with tater tots. Bake it for 25-30 min and put the cheese on just in time for it to melt. I add seasoning and veggies deepeneding on what I have or feel like. It's realy whatever u want. Good though
I have a few 1 cold whoppers 2 cold pizza with blue cheese 3 wormed up home made mac&cheese wife just cant make it like my mother :( but I don't tell her that ;D
