I have decided to go with a Granberb mill but what size should I go with?. I do have a Husky 3120 so power is not the issue. I do have access to some large trees that would call for a 48" or 56" mill but there will be more smaller trees than larger. Will a large mill be a safety issue or of any drawback on a smaller tree?

I'd go with the 56" mill.
You can adjust it for a shorter bar if needed.
No problem with some bar sticking out past the log, it is enclosed, so you'd be hard pressed to get up against it.
You can cant the log by taking off parts up to the capacity of the mill. If you really don't need a 56", I wouldn't get it since handling becomes a real pain in the backside. But I carry mine into the woods. If you are working in a yard, that changes the rules a bit.
If you are going after crotch wood (See "Tooling Up" thread) where Brian Bailey shows how the big boys do it, you may need the 56". If you are just after regular logs...you could go with less.
Finally, you could get a shorter set of horizontal bars from Granberg so you could set up as say a 36" and a 48/56" for not a whole lot more money. I run a 36" on an 066 and wouldn't like to carry much more into where I've been going. But, if the logs are coming to you, it really doesn't matter much.
BTW, you will still want more power. Get over the feeling and see what you find inside the log. Happy sawing. I can tell you I really like my Granberg, it has worked out better than anticipated.
