Title: Chicken, corn, potato, pepper soup.

I made this last night. I cut the spine out of a chicken (spatchcock) and grilled it till it was 180 internal and just about falling off the bone. When it cooled I pulled out the bones and skin and boiled them for an hour. This is the original chicken broth. I strained it and added cubed potatoes, onion, celery, garlic, red bell and jalapeno peppers. Simmer for 10 minutes add in the cut up chicken and salt and pepper to taste maybe a little cumin too. I saved out a breast for chicken salad today.

This pic is a little washed out but I am using my favorite cast iron pot.
When it is done I move it off the burner and add in fresh Kayle, basil and oregano.

It made a tasty meal with a little kick.
