What exactly is the differences between a Husky 371xp and a 372xp. Also does anyone know if you can convert the 371 to use the side type chain adjust. like the 372 has. I have a 371 but no one has a 372 that I know so I can compare.

The 371 and the 372 are the same basic saw with only minor difference. The most obvious is the 372 has the new style transparent fuel tank and the chain adjusters are different. The first 371s used a single ring piston but some of the later ones had the two ring. Every part on the saws are interchangeable.
You can update your saw to the side chain adjuster. All that you have to do is remove the old one and replace the clutch cover with the new style.
Husky has some rather odd prices on those covers. If you check with your local dealer, the 372 cover costs more then a 385 cover. If you set the two side by side, you will not see no difference. I buy the 385 covers and use them on the 372s all of the time.
