old grand ma's biscuits, finally got it

well this is a recipe from my buddy's grand mother, she had to be a good cook, cause she taught Dr. William Fredrick a thing or two, first try was a bust, second try this morning was the ticket, I know it's no big deal for many, but I'm a griller, not a baker, the wi fe was Proud! of me! No pics of the dish, bacon and home grown eggs with gravy, she said "Really?" when I started for another pic, so we just ate,


 
Nice buttered crispy crust on the bottom, lite and fluffy, but held together for some good ole Wisconsin home made strawberry jelly from last July,  this can only get better with practice! ;D
only have a few chain saws I'm not suppose to use, but will at times, one dog Dolly, pretty good dog, just not sure what for yet,  working on getting the gardening back in order, and kinda thinking on maybe a small bbq bizz,  thinking about it,

They look like a meal by themselves. Just add butter. I should learn how to cook biscuits in a pan, my oven doesn't work.

They look great. My wife made up a batch yesterday. defrosted some of last years strawberries and made strawberry shortcakes. :)

my mom is an awesome cook and baker, and theres still a few things that Grandma made that cant be reproduced....she never wrote anything down!  i'm working on mom to get her stuff on paper, along with putting names and dates on old pictures...   :)

very simple recipe for biscuits:
1-3/4 cups of flower
4 teaspns  baking powder
1/2 teaspn  salt
3/4 stick butter
1 cup of milk

mix dry ingredients then cut in the butter, (cut the stick into pieces for easier working)
once the butter pieces are tid bit sizes add the milk and mix to a ball
on parchment paper take the ball and flatten to the dia of the pan, should be about 3/4" thick on a reg cake pan
using a biscuit cutter make the biscuits and place in the pan, try to fit them close together
bake at 375 til done  cant remember how long, just when they look done,

Delicious looking biscuits!

I use the same recipe as my mom but hers always turn out better, apparently one of the tricks to biscuits is to not over mix when adding the milk or over handle the dough once it is mixed, just knead a few times and roll out.

Sometimes I just spoon out the dough and drop in the pan instead of rolling and cutting, quicker and less mess to clean up.

Thanks for posting, I think I will give your recipe a try.

Here is the recipe I have been using:

2 cups of flour
2 tablespoons of sugar
1 teaspoon of salt
4 teaspoon of baking powder
½ teaspoon of cream of tarter
½ cup of butter
1 cup of cold milk

Mix dry ingredients, cut in butter, add milk and mix quickly, knead 8 to 10 times.
Bake @450° for 12 to 15 min.

My wife makes the best biscuits I've ever had. Even better than Mom's, but don't tell her I said that.  :D
My wife's recipe is real similar to drobertson's, but instead of regular sweet milk, she uses butter milk, and instead of butter she uses lard. Then she just takes that ball of dough and squeezes off blobs that become biscuits. Mmm, mmm good.  ;D

My grand mother wasn't a overly good cook, but she could really put out a pan of biscuits. The were like eating flavored air and were just as soft at the end of the day as they were in the morning. I have never even been able to come close. She wouldn't roll them out either. Just pinch them of like redprospector mentioned and then put them in a pan with plenty of melted crisco or bacon grase, dipping both sides in the oil for even browning i suppose. I think I must handle my dough to long. Mine can come out a little dense every now and then.

I tried several times and all I got was hard hockey pucks. Didn't rise. Going to have to try again after seeing how much sodium was in the froze ones you buy.
Give me a new saw chain and I can find you a rock in a heartbeat.

No doubt over handling is troublesome for light fluffy biscuits, we made some bread the day before, my loaf was denser than Christy's, later she said I was playing with the doe to much ;D  live and learn,,

Wife sold stuff here,biscuits were a big thing,she had some sort of hand operation and I had to take the making of the biscuits over for her. She would have a fit about rolling the dough out too much. A fit is being nice. I am lucky to be alive. I think I lost some hearing during the biscuit making.

CHOCOLATE GRAVY
1 ½ cups sugar
2 ½ Tablespoons flour
2 ½ Tablespoons cocoa
1 ½ cups milk
½ cup water
A few drops of vanilla (optional)
Mix sugar, flour and cocoa in a large skillet then add the water to mix.
Add the milk and cook on medium heat until thick.
Add the few drops of vanilla while cooking (optional)
Serve over hot buttered biscuits

L-I-B!   :D :D :D :D my wife the reading teacher will never, never let me live this one down ;D  mercy sakes alive, of all things, I just know I'm ready for springtime!  I will say, she is proud of my latest baking accomplishments,  I now have been assigned to the biscuit detail, and coconut, oatmeal, chocolate chip cookie detail, and one more shot at the cinnamon buns and I am in there too ;D  I really need to be at the shed sawing, ;D  but the eating is mighty fine for now.
