Got the dehydrator running now that the AC is off. Drying Principe and yellow plum tomatoes. Boy do we enjoy them in the winter

Red Peppers keep on coming. It's crazy this is my 3rd picking and there are still many left. The Ajvarskis have provided over 2 bushels from  8 plants so far. Picked and roasted 60 pounds again yesterday.

Going to harvest sweet potatoes tomorrow. Can't believe the size of the plants but I read in rainy years large plants can lead to small potatoes. They look like 3 ft tall hedges now.

Pie pumpkins and butternuts are ready also. Hard to keep up this time of the year.

Chinese Python Snake Beans from Baker Creek (No affiliation).  Planted four places in the bean house because the missus told me I grew too many pole beans...just wanted to see if they lived up to the hype.  They did.   Scared the heck out of the neighbor who came over for some jalapenos, and they don't taste too bad. ;D

Update:
These things are getting out of hand.  I may have to break out the 12 gauge!

Do you eat those beans? What do they taste like?

Dug up the sweet potatoes today and what a surprise over 150 pounds from those 20 slips that survived. Spread out in the garage to start curing now. Some aren't pretty but are big.

This one was the winner at over 4 pounds 10 ounces. Pretty good for my first try at growing them.

Very edible.  They are apparently a staple in Indian cuisine.  Check for Snake Gourd recipes.  I tested a couple of smaller beans with a recipe found on 'The Google'.  Scraped off the waxy white coating (easy), and then sliced and sauteed on the Blackstone with garlic, onions and peppers.  Eaten by themselves they tasted like a cross between cucumber and green bean....mild flavor, but tasty.  The flavor got lost when everything was combined.

This was a double batch yesterday because of the whack of tomatoes.
Usually 8 tomatoes diced
Half a medium size onion diced
1 jalapeƱo minced
About 3/4 cup chopped cilantro
2 teaspoons minced garlic
1 teaspoon salt.
Cover and let stew on counter for 3 hours then eat or refrigerate.  Lasts about a week.
Optional
Olive oil
Hot sauce.
Bell pepper
The bunch of cilantro from store can make 2 or 3 batches.   I try not to make it overpowering.   You can add more tomatoes if it is.

Do they store well?

Picked about  250 pounds of butternuts today. Cut back and only planted 3 hills this year but they  really  did good. Picked another  mess of pie pumpkins and gourds also. Darn bees are bad and aggressive now when you rummage through the vines.

Yes, they are good into December when stored in a cool dry spot. The coolest I have is the basement in the 60'sF. If you had a spot in the 40's they would keep even longer. You have to make sure you don't disturb the stem. After the December they get darker and wetter. I don't remember loosing any to rot though, but I only grow about a wheel barrel full. Once we cook one up we freeze what isn't eaten. They make nice pies to. I've been hankering for pie with ice cream on top. Real ice cream, not that bean gum and agar crap. ;D

Curing sweet potatoes in the grow tent. Have to keep them 80 to 85 deg and over 80% humidity for 10 days then around 65 deg for 10 days to sweeten them up and form a skin for long storage.
