Shrimp and Grits

As requested, I asked my friend for his recipe for shrimp and grits.  His are the very best that I have ever had, bar none.  Here is his recipe discussion.

Probably need a half pound bacon, an onion, and a green pepper.  Cook the bacon
crispy and then put the chopped up onion and pepper in the grease and cook until
done (Note by WDH - I think that you take the bacon out, leaving the grease, before cooking the onion and pepper).  Add a pound of andouie sausage if you can find it.  After it's done
remove from pan.  Put in about a tablespoon of flour in whatever grease is left
and make a roux. Add salt and pepper to taste and maybe a little Cajun seasoning
and a tablespoon or so of Wosterchester sauce.  Add a little milk, maybe a cup
or so.  Then when it is thick, put in the shrimp and cook just until they turn
pink.  Crumble up the bacon and put it back in with everything else.

The grits were just Quaker 5-minute grits with a lot of white cheddar cheese
added.  If you can get the shrimp with heads on, take the heads and shells and
make a shrimp stock to cook the grits with instead of water.  I have done it
with just the shells and it has a little shrimp flavor, but the heads make a
really good stock.  Don't forget to strain out the heads and shells before using
the stock.


Now, I need to head out to the Shrimp Store  ;D.

I ate at Bubba Gump Shrimp Co last night. They had this on the menu. I opted for Mahi Mahi over rice ;D

It had a lemon butter sauce and 8 broiled shrimp on top. DELISH!! I also had a very nice Cinnamon bread pudding!

Apparently, RB has what he wants and enjoys what he has.  Now really, no one can argue with that.   :)

Oh don't worry I eat my share of steak and chicken, maybe more than my share as far as steak goes.
Living on the gulf coast our selection of seafood is just too tempting when going out for dinner. My Lady does not eat seafood of any kind so that's my chance to indulge. :) :)

I only get shrimp grits a couple of times a year, only a couple of restaurants around here that make it decent, but when it is good, it is VERY good.

I've had grits for breakfast.  I've had breakfast for supper which included grits.  I've never had shrimp for breakfast.  I think someones clock is off by about 12 hours.  Shrimp and grits in the same meal, that just ain't right!

I'm not a fan of grits, but anything with that much pork product involved is bound to be good.  Shrimp sounds like an added bonus  ;)

I may just give this one a try for supper one day.  Only problem here is in WV, GOOD shrimp are non-existent.  Just the frozen stuff is available.  Once in Florida I had HUGE (at least to me) shrimp, that rivaled what Red Lobster serves for tails up here.   :D

Man! that looks like a great recipie.

Out here in CA nobody has ever had grits. I personally love them, but have never heard of such a mix of bacon, sausage, and shrimp other than gumbo. This will be prepaired soon.

Went to Cracker Barrel today being seated about 10:25 a.m.  Guess what was on the menu?  Shrimp and Grits for lunch and up.  I asked our waitress if they were available.  She checked the kitchen and said it would be about another 10 minutes.  Done!  Order Placed.  These were cheezy, had bacon chips and fine chopped tomato on top.  The grits needed a little salt but, the shrimps were just right.  The order put my wife into a tail spin.  I belched on up to about 2:p.m.  They were good.  Don't think wife would eat'em for breakfast.  If I were to duplicate them, I'd have to add a little diced bell pepper and onion.  I might kick up the shrimps with a little red pepper.   Would have been good with an order of hash browns on the side.  Thumbs up on the Shrimp and Grits!
