Doc,

On trout, you can gut them, then hold the body in left hand, take head in right hand and snap the head backwards onto the back then pull straight back to the tail and skin the trout in one fell swoop.

i will have to try that.  believe it or not we have trout fishing 3 blocks from our house.  every spring and fall, the Dillon nature center has the pond stocked.  easy to catch as they are used to being fed twice a say.  (farm raised).  The best was in Colorado.  a few in a river, but we caught 26 in 2 hours on lake Estes.  they had just stocked it with farm raised trout as well.   fishin-smiley

On trout, I leave the skin on for flavor and to keep the fish in one piece when I grill it.
