I have a Stihl 039 with an 18 inch bar that has been just sitting for years. Pulled it out cleaned it up and it fired right up. My 362 that I use for felling has a 20 inch bar.  It would be nice with some of the bigger oaks to have a 25 inch bar.  Can the 039 handle a 25 inch?

It should. I had a 25" on my 362, and it handled it fine.

I had a ms 390 that came with a 28 in bar I just had to take it easy and keep the rpms up but it liked a 20 in better

When I first bought my 039 it had a 32" bar on it, I never used it that was as I thought it was too much for that small of saw. I replaced it with a 20", and then a 24". I think the 24" is a good match, I can't see a 25" being an issue.
