   I take my backstraps and the briskets from my deer and corn them. We like it better that way than cut into steaks. Not hard to do and works well for us.

Back straps (loin) deer meat (venison) are good anytime. If one doesn't like the taste, then put seasoning on it to suit your taste. 
But I prefer the venison deer meat taste without adding anything, even salt. 
Salt is used to cover up bad tasting food or preserve it. IMO

  What is your mix for deer sausage? I mix mine about 4:1 with ground pork or cheap pork sausage and season accordingly. I shot one Dec 26 last year just for sausage which was the first I ever stuffed and smoked but it  won't be the last. I found and bought another smoker Sunday at a garage sale with that in mind.

Howard i am pretty sure its 3 to 1 but ill get back to you later the wife knows but at the docs now im headed to the smoke house now   later

I mix my ground venison 9:1 with beef suet for burger, and the same ratio for sausage if I can find pure pork fat. Otherwise I do 50/50 with a shoulder roast.

howard had a va  appt yesterday so this is what we do 17lbs deer meat 8 lbs pork butts 1 big onion 1 cup garlic powder half cup garlic salt 1 bag of kents ranch seasoning  i use hog casings  i cut them the width of our dryer also sweet pepper when we have some mix and smoke anywhere 4 to 5 hrs  this is the old recipe from the farm 55 or so years ago

   Thanks. You use about twice the pork to deer ratio I use. We do have to add grease to cook ours as it is too dry. Usually my wife will fry her bacon then add the sausage.

   I use a commercial seasoning. A box has two packs that each do 12 lbs of meat. If I add cheap pork sausage I add the seasoning based on just the amount of deer meat. If I use a Boston butt or ground pork I season based on the the total weight of the meat.

We started grinding our venison with bacon. We can(could) get 5lb boxes of ends and pieces bacon pretty reasonable. Maybe a lb of bacon to 3 or 4lbs of venison

We eat 3 or 4 deer every year.  Could use more but I dont have much time to hunt.   Love back strap with scrambled eggs for breakfast.
