Thanks for sharing that site Fabiola, I like that big Jesus up on the mountain in the moonlight. I first saw a picture of that when I was in about the 7th grade (I think). It is very impressive as is the whole city.

Fabiola,

Under the section on markets, there's a photo titled "fresh hearts of palm". What are they used for?

I know that Chile is way west of you but do you have Coigue. I've tried drying Coigue from Chile and it's pretty stuff but really hard to dry without collapse. It is like that DanG Red Beech from New Zealand.

Den,
It is palm tree. You can buy it there. It is not to dry it is to eat "in natura". I will look for  a site about it and I will IM to you!
I never heard about Coigue!

Fabiola,

I found a site with a Google search. Palm pith! doesn't sound too tasty. It must need a sauce!

Den,
Palm Hearts are the growing bud of the palm.  In florida we eat Sabal and Palmetto.  You may hear us talking about "Swamp Cabbage".  That is a palm heart. If you look at the a palm, you will see the the top is carrying the green leaves.  That area from which they grow has a cabbage-like fibrous center that, when boiled is much like cabbage. Palmetto hearts are much smaller, about 4 to 8 inches long and generally pickled.  They are found on the menu of Gourmet restaurants in salads.

Cabbage Palm is seldom eaten in Florida anymore because the Sago is protected as the State tree and to take the heart kills the tree.
