Hush Puppie Recipe?

We brought back a bunch of fillets from our Missouri fishing trip so that means fish fry. I'd like to do some hush puppies but don't know how to make them. Anybody got a secret recipe they'd share, promise I won't tell another soul.  ;)

I hate to admit this, but there is a store-bought mix that is excellent.  It has the perfect amount of sweetness.  That is critical as they need to have a hint of sweetness without being sweet.  I don't know if you can find it in your area, but the brand is Martha White Hushpuppy Mix.  I finely dice up a whack of sweet onions and add them as I really like onions in my hushpuppies.  Using a full teaspoon at time dropped into the oil is the perfect size. 

I hope that it is not sacrilege to suggest a ready-made mix, but it makes some of the very best that I have ever had, and I have had a lot  :).

I've eaten a pile of hush puppies Norm. My favorite are these:

RALPH & KACOO'S HUSH PUPPIES

2 1/2 c. cornmeal
1 1/2 c. flour
3 tbsp. sugar
1 tsp. baking soda
1/8 tsp. red pepper
2 tsp. baking powder
1/8 tsp. garlic powder
1 tbsp. chopped green onions
1 c. evaporated milk
3/4 c. water
1 egg, beaten
1 tsp. chopped parsley
Oil for deep frying

Mix all dry ingredients in a large bowl. Mix together onion, milk, water, egg and parsley in a separate bowl then add to dry ingredients and blend well. Refrigerate until ready to use. Heat oil to 350 degrees F. Spoon batter into oil, do NOT put too many in and overload the pan! If you do, they'll be greasy and nasty. Fry until golden brown. Makes 30-40 hush puppies.



Then serve them with this tartar sauce ...(also from Ralph and Kacoo's)

1 ¼ cups onions , chopped
2 ¾ cups celery , chopped
1 cup dill pickle relish
3 cups Hellmann's mayonnaise
Directions:

Drain the juices from the relish, onions, and celery.

Combine with mayonnaise.

Norm, just don't waste your time making little hushpuppies.  I hate it when someone serves me hushpuppies about the diameter of a quarter. They should be at least the diameter of an old silver dollar. Plus, you gotta make a bunch 'cause you not only eat 'em as an appitizer but you eat 'em for the main meal and then for dessert you pour 100% Cane Syrup over some.  Maple syrup or Corn Syrup just won't do. Gotta be bonified 100% Cane Syrup.

LogDog's recipe looks good. One thing to remember is that Hushpuppies are a simple recipe. Brother Tom never liked it when "Chefs" complicated recipes. Here's another recipe by Paula Deen that looks good, 'cept I like my huspuppies a little bigger than the ones she pictured.

Norm, heres the one i usta use for the firehouse , Ruritan Club, n church suppers. NOTE is for 100 plates,,I cant just make enough for supper ,lol ;D ;D
5lb corn meal
2lb self rising flour
2lb sugar
3lb onions
salt n pepper to taste
Texas Pete hot sauce
1/2doz eggs
1/2 gal or more whole milk
Mix dry ingredients well
peel, n chopp onions small enough to go in blender or food processor
mix eggs n onions with enough milk to blend / puree,,,you want onions as small as possible,,should be consistancy of thick milkshake. it will take at least 1/2 gal of milk ,,save some in case batter's too dry.
add dry ingrediants to wet in small batches, till all mixed, let rest several hrs so all the meal gets wetted, and soft. Nothin worse than hard bits of dry meal in hushpuppies.
Heat 3 or 4 inches of good new oil in large pot,i had a dropper, but a spoon will work. work in batches , drop in hot oil,,usualy have to turn them, but sometimes they'll turn themselves. fry till golden, take up, drain n enjoy. 8) 8)

WDH ...Did you ever get to eat at Ralph & Kacoo's over here in Bossier City while you were working over this way. Those hush puppies are delicious! I watch my wife's eyes each time she takes her first bite and they get real big .... :o She likes butter on hers ...I like tartar sauce. You won't be disappointed.

I agree with Charlie ... make 'em a tad big ...like a donut hole. That's how Ralph & Kacoo's does there's. A whole one is too much for your mouth so I cut them in half and spread the tartar sauce on. Half of one is a perfect bite.
