I've fixed pancakes in the past but, this was a first.  I'd always made them using white self-rising in the past.  Today I found this recipe on Chow Hound.  Light and good tasting.  For your pleasure if you dare:

2 cups Whole wheat flour
4.5 tablespoons Baking powder
½ teaspoons Salt
4.5 tablespoons sugar
2 eggs
2 cups Milk (I used buttermilk)
4.5 tablespoons Melted butter or vegetable oil
½ teaspoon Vanilla extract

For a different experience in pancakes replace one cup of wheat flour with one cup of buckwheat flour.  Gerald

Sounds like a lot of baking powder. I've always added cinnamon and pinch of nutmeg.

I love pancakes with real maple syrup, sounds good Chris!

I thought so too on the baking powder Bibby.  I guess because I used buttermilk instead of milk I had to add a bit more.  I didn't measure, just poured some and stirred for the right consistency.  I was surprised how light they were.  I had real Maple in a jug to go with them.
