In need of a good egg salad recipe

Compensation

My chickens are flooding me with eggs and I will have alot left over after I pickle a case of jars worth. I am now in the mood for egg salad but no good recipe.

Or you could get a recipe for noodles and make chicken noodle soup out of those hens and save the feed bills.

The last time we had some hens, I ate egg salad every day for lunch for a long time to get something out of those feed bills. So I believe we threw all our egg salad recipes away.  ::)

I love this one!!

6 large eggs
1-2 tablespoons mayonnaise (or Greek yogurt)
Salt and pepper
A tiny squeeze of lemon juice
2 stalks celery, washed and chopped
1/2 bunch chives, chopped
2 small handfuls of lettuce
8 slices of whole grain bread, toasted


Place the eggs in a pot and cover with cold water by a 1/2-inch or so. Bring to a gentle boil. Now turn off the heat, cover, and let sit for exactly seven minutes. Have a big bowl of ice water ready and when the eggs are done cooking place them in the ice bath for three minutes or so - long enough to stop the cooking. Crack and peel each egg, place in a medium mixing bowl. Add the mayonnaise, a couple generous pinches of salt and pepper, now mash with a fork. Don't overdo it, you want the egg mixture to have some texture. If you need to add a bit more mayo to moisten up the mixture a bit, go for it a bit at a time.
Stir in the celery and chives. Taste, and adjust the seasoning - adding more salt and pepper if needed.
To assemble each egg salad sandwich: place a bit of lettuce on a piece of toast, top with the egg salad mixture, and finish by creating a sandwich with a second piece of toast.
Make 4 sandwiches

I like pretty much the same thing with a little chopped dill pickle in it and a dash of paprika.

Thanks guys! I will try it both ways tonight. I have 4-18count cartons full and a basket on the counter. And Gary, if this rooster attacks me one more time I will be asking for noodle recipes soon. He charges me and got me once. The way I see it, he gets a free ride with shelter food and water so he owes me especially after being aggressive.

Can you sell the Eggs to get some return?

Yes I can, I have people lined up but the problem is they are beginning eggs. They are small and people want at least an average size egg. They are starting to get bigger, some are bigger then anything at the grocery but the consistency is way off. So that's why I went with keeping these to avoid the inevitable price battle. I only have about a dozen normal size eggs or larger.

Time to give the rooster a good thrashing.After that he will leave you alone.Get an egg scale and sell the larger eggs.When I was selling eggs a woman asked are they small?I told her for a buck a dozen she didnt have much choice.You dont need a rooster any way.I had a couple of roosters many years ago.One went after my daughter.We had him for dinner.I was some what concerned that the children would not like to eat the rooster.My son said that was good,when are we going to eat the other one.?He was 6 years old.You dont need a rooster anyway so wring his neck and roast him.

I have the rooster because out of 12 pullets one died and 5 turned out to be roosters. So I want to reproduce some of my loss. Tonight he was good, I think because he was starving since he won't leave the coop like the rest of the hens. I am going to toss him out tomorrow to torment the cats. ;D

Nothing sneaker than a flogging rooster. We had one here one time that when you turned your back here he came. If you turned to look at him he would look around all innocent. Caught me in the wrong frame of mind one day so near by I had a 38 pistol in my truck. He was about 10 yards away and I aimed for his neck never dreaming of hitting it. Blew his head clean off so then I had to dress it. Always say he got the last word in.
Give me a new saw chain and I can find you a rock in a heartbeat.

Its funny how that works. I love dove meat, and I seen one when I brought my Sterling SMG home. I had dove that night.

I have a friend that tried raising chickens.  The first dozen died, so he got two dozen.  They all died, so he got six dozen which also died.  He finally figured out the he was either..... [spoiler]Planting them too deep or too close together !!!   :D[/spoiler]

If my rooster doesn't quit attacking me I'm going to bring him up to Tenn and use the SOB for coyote bait.
I about brained him the other day with my feeding bucket, knocked him about 10 feet. Figure that would cure him but nope next day when I turned my back here he comes again.

My advice on aging gracefully... ride fast bikes and date faster women, drink good tequila, practice your draw daily, be honest and fair in your dealings, but suffer not fools. Eat a hearty breakfast, and remember, ALL politicians are crooks.

They are sneakie and stubborn %%%s. I knew the one I mentioned was sneaking up behind me one day. You could turn around and he would just look left and right all innocent.

Anyway, I timed it just right so he was behind me and punted him probably 20 yards. Never quit. My son whose was about 5 spuirted him one day with a water pistol. Course he got flogged till I got there. He said that chicken picked me.

Mines been really good lately. Even ate out of my hand and let me work around him. I was thinking about making him a 2'x4' box with a screen and mount it on the side of the coop. That way he could see the hens but wouldn't be able to do anything. I would call it his penalty box and put him in it at night while he is helpless. He did good Sunday when I let them all out free ranging.

That is a very detailed recipe. Ours is a similar process. Except we use dill pickle relish instead of the herbs, and a little mustard to taste. Now I am craving some. Been awhile .
