need help deciding . syp indoor

I cut a 32 inch pine tree i plan slabbing it up with my chainsaw mill.

I am going to do 2 to 3 inch slabs not sure yet. I am building a house in couple months and i want to do my kitchen counters, kitchen table and bathroom sink with these slabs. i plan on air drying them down to 10-14%.  once i am done air drying i plan on sanding them down to desired look then i plan on using bar top expoxy. my concerns are will i have problems in the future as far as mold or any other issues?  any opinions will be appreciated i can assure you.

2" lumber takes more than twice as long to dry as 1" lumber.  So you can imagine that 3" lumber will take much longer to dry.  The decision of whether to saw them 2" or 3" thick is an important one when it comes to drying time.
