Not only did I eat what my customer broiled Saturday, PatD and I had more today for lunch.

Gilhooleys Oysters, oysters on the half shell, a shrimp on top, and a cheese sauce, on the smoker till done.  Um, Um, Um.

   Oysters on the half shell are just a waste of a good fried oyster IMHO. When I was working a project in Chalmette LA near New Orleans I tried and fell in love with good Oyster Po-Boy sandwiches down there. I have eaten them broiled and they were good but fried with good spicy cocktail sauce is the cat's meow for me. digin1

  Speaking of oysters on the half shell - did you ever think how drunk the first guy to eat a raw oyster had to be? :D

My advice on aging gracefully... ride fast bikes and date faster women, drink good tequila, practice your draw daily, be honest and fair in your dealings, but suffer not fools. Eat a hearty breakfast, and remember, ALL politicians are crooks.

I know it's extremely difficult to have left over fried oysters, but if you do, they make the best oyster stew possible.

The same folks (Gilhooleys) who produce the Gilhooleys Oysters turn out an oyster stew that is really a chowder.  Wonderful stuff, but you have to be in San Leon, Texas, to get some.

A small bowl of chowder and a dozen oysters with a cold Shiner and you got the afternoon made.

I cannot wrap my head around taking a very nice and tasty, crunchy fried oyster then putting into a stew where it gets all gooeyfied? 

 Honestly I never cared for freshwater drum as I caught in KS-are they similar in taste to redfish/red drum? My Grandfather was a redfish lover who fished for them his entire retirement every winter in Ft Myers, FL. He also like red snapper which I have never liked as too fishy for me. I just google redfish and compared to red snapper and puter says they're similar and mild. Not so to me. 

My oyster stew recipe: 1 can of oysters from Walmart/Krogers via the far east->Asia. (I like the "real ones" but too tight to buy them lately.) 

Dice 3 large stalks of celery, several carrots, ~ 1/4 C diced onion and stir fry in olive oil in a sauce pan until tender. If you don't have stents(like me) you can make it better using lots of butter! Add 2 cups of milk, 2 tblsp of Worchestershire sauce and salt & pepper to taste along with the can of oysters cut into ~3 pcs each. I don't do the thicker milk route as flour or other thickeners can provide. Garnish with enough paprika to kill a horse.

I love fresh oysters breaded or smoked, have eaten them raw but not my favorite. The canned ones from China are all I can get locally and are pretty sad, they fall apart trying to put them on a cracker or skewering  with a toothpick. Gotta make a trip to the coast, I know where to get the good ones.

All the oysters are fresh around here but that's wasted on me.
I'll eat oyster soup, stew or baked with cheese and fried but that's were I draw the line.
Raw, not a chance.
Clams same thing but I do like them roasted or steamed.

Daughter #2 and her BF are going to be here for the weekend. Beings they are from the great white north I'm doing a fresh seafood dinner of shrimp, scallops what else I dunno yet till I get down to the docks and see what just came in. They don't eat carbs

It's also my oldest Grand Daughters 14th BD. Neither she nor Wild Bill eat seafood so I'm doing our traditional spaghetti and homemade sausage dinner.

PatD and I had more Redfish & Oysters today for lunch but they were prepared differently:
 

 
She cornmealed and fried the Oysters and I seared/skillet broiled the Redfish in Wishbone dressing.  Skin up first and then finished skin side down.
